Answer: Extremely fresh eggs are not recommended when making hard-boiled eggs. They are very difficult to peel. This is the best use for eggs nearing their expiration date.
1. Remove desired number of eggs from the refrigerator and let them sit at room temperature for 15 minutes.
2. Place eggs in a small sauce pan and add just enough water to completely cover eggs. (Note: the smaller the pan; the less room the eggs have to jump around and crack into each other).
3. Bring the water to a rolling boil. Covering the pan will lead to a quicker boil and is recommended.
4. Immediately reduce heat to simmer and remove the cover from the pan.
5. Let the eggs sit in the simmering water for 12 minutes. (11 minutes for medium eggs; 13 minutes extra-large eggs)
6. Carefully remove the pan from the stove top and place beneath the kitchen faucet. Run cool water into the pan for a minute until the water is cool to the touch. Give each egg a little whack to the side of the pan, so each egg has one or two cracks. Some will tell you that this lets pent-up sulphur escape. More practically, this allows a little steam to build between the cooked egg and its shell to make peeling easier. Let the eggs sit in the cool water for 2 to 5 minutes.
7. To peel in a easier way: Place hard-boiled egg on a hard surface such as a cutting board. Roll the egg back and forth - applying a very slight amount of pressure. Remove the cracked shell beneath a faucet of cool running water.
8. If peeling multiple eggs, place peeled eggs in a bowl of cold water while you work the others. Refrigerating peeled eggs is not recommended. Hard-boiled eggs - still in their shell - can be stored in a refrigerator for 5 days.

Everytime I try to hard boil eggs...I have trouble peeling them. How can I do it and peel them perfectly.....Who has the best way of doing this?
Answer: I put the eggs in a pan with cold water and a little salt. (The salt seals the whites in if the shell cracks.) Bring the water to a rolling boil, boil for five minutes, then turn off the flame.
Cover the pan and let sit for 30 minutes. Drain the cooking water, and run cold water over the eggs. I seldom have problems peeling them, using this method.
Make sure the eggs aren't too fresh, as this will cause problems no matter what method you use. And crack the shell thoroughly before you try to peel the egg. If the shell is cracked all over, it will come off a lot easier.

Answer: Interesting. My father and I were just discussing this yesterday. You are not dreaming it. Fresh eggs are a pain to crack. Why? First of all keep in mind that the eggs that you bought in the store can sit in a cartoon up to four months before they are sold. Not counting the time that it took them to get in the cartoon. Said but true. While your eggs are only a few days old.
So what does age have to do with the difficulty of boiling an egg? The fresher the egg is the smaller the air bubble is. The older the egg the larger the air bubble is thus causing it to be easer to open. So what happens to the egg that was once in place of this air? As the egg ages it loses water.
If the egg was being incubated the air bubble would have gotten larger because the chick was eating the yolk. And the reason why the chick doesn’t get dehydrated is because of its mother keeping it at a certain humidity.
So what can we do to make fresh eggs turn into nice hard boiled eggs?
For most people they suggest letting your eggs age for a week or two in the refrigerator. Even 3-5 days will help. If you must use fresh eggs though here are some tips.
Boil your eggs quickly. Hard boiled eggs tend to be harder to peel if they are cooked at a lower temperature for a long time.
Put some salt in the water. Putting salt in the water and boiling it will cause the eggs to be boiled at a higher temperature.
I have heard of the vinegar trick and I personally am not sure of what it does. But if you do use vinegar do not let the eggs remain in the water unless it is boiling. If it isn’t boiling the eggs will be drawling in the vinegar because they are permeable. If they are boiling then they eggs will be losing moister (sweating eggs).
Leave you eggs in a hot area. If you leave your eggs at around 100 degrees a chick will most likely not form because the temperature will kill the membrane. Even if a chick does start to form you will not even notice the chick development if you eat it in a day or two. This will cause the egg to sweat and loss water.
Draining the eggs after you boil them, cracking them, and then placing them in very cold water or ice water will also help the egg shells come of. Ice expands things.

my husband and i owned a restaurant for a couple of years. we made tons of egg salad. we always bought the eggs we were using for egg salad a week before we would use them.
the shell sticks to the egg because of that white membrane between the egg and shell. the older the egg, the more that membrane dries out. when the eggs are a week or two weeks old, the shell will peel off much easier.
try this: buy a dozen eggs and leave them in your fridge for a week - boil them and then peel them. see if it is easier!

The Classic
Hard Boiled Egg
The simple, classic Boiled Egg, is indeed one of the finest and easiest edible delights known on earth, with just 70 calories, and full of nature’s most perfect form of protein.
While there are many ways of preparing Boiled Eggs, we suggest below the directions for making eggs which are the easiest to peel and which will not have the dark green discolored coating on the yolk (see step 2 for tips to help avoid the green discoloration).
Extremely fresh eggs will not peel easily. In fact, an egg that is just a day or two old is almost impossible to peel. As eggs age, the shells will peel more easily. It is advisable that eggs used for hard cooking (including Easter Eggs) be at least 2 weeks old before cooking for easiest peeling. Hard cooked eggs that are cooked slowly over low heat (and not ‘boiled’) will be more difficult to peel.
Directions for Large Eggs:
1. Place eggs in a saucepan with enough COLD tap water to cover completely by 1 inch. Bring to a ROLLING boil over HIGH heat. Once the water is brought to a rolling boil, PROMPTLY reduce heat to a lower medium boil and cook an additional 10 minutes for a “hard boiled” egg. For a “soft boiled” egg reduce the time by a few minutes.
2. Remove from heat and IMMEDIATELY place eggs under ice cold water or in a bowl of ICED water to chill promptly to help yolks stay bright yellow. Chill for a few minutes in the cold water until the egg is completely cooled. This is an extremely important step which prevents the greenish “ring” from forming on the surface of the yolk over time. If the egg is not chilled immediately after cooking an unsightly dark greenish ring will eventually appear on the outside of the yolk.
3. To peel...crack on all sides, roll egg between hands to loosen shell,and remove shell. Enjoy, with a light sprinkling of salt if desired.
To serve in egg cup, place egg in cup small end down, slice off large end of egg with knife or egg scissors and eat from shell with spoon.
Refrigeration is necessary for hard boiled eggs if they eggs are not to be consumed within a few hours.
Refrigerated boiled eggs, kept in the shell, can be kept for up to 1 week.

Answer: First, you have to realize that what the Microwave does is make water hot, eventually boiling it. This makes steam, so any moisture in yoru egg will expand and explode. The gadget usually makes a small hole in the top if the eggshell to let the steam out!
If you do not need the shell, then crack the egg into amicro-safe dish, add a few drops of water, cover with wrap and nuke away. As each micro is a bit different, you will have to time it to see when it is hard or soft boiled. Likewise, you could put the egg into a micro-safe bowl of water and do it that way i guess. I find micro eggs to be a bit rubbery myself.

I guess what I am really trying to ask is what should I use to draw on the egg? I am drawing little cartoons on the eggs but I do not know what type of writing tool I should use. Also, if I drew on the egg with pencil first then traced over it with sharpie, would this work??? Thanks~
