Recommendations for a good book on how to get a nutritionally balanced gluten-free diet?
Id like to try cutting out gluten from my diet to try to help a dermatitis issue, but am concerned about maintaining a balanced and healthy diet.
Im not a very creative cook or shopper, so Id appreciate any recommendations for books on how to eat a balanced gluten-free diet, as well as books that have good, simple recipes for healthy gluten-free dishes (hopefully with ingredients that arent too hard to find). Thanks!

How long after starting a GLUTEN FREE DIET will your stomach start to feel better?
I have a gluten sensitivity. I just started going gluten free a week ago but I still get stomach pain and Im still running to the bathroom. How long does the diet take to workk?
Answer: Well I'm not sure if you are hoping to lose weight or if you are just looking to resolve some stomic issues but here was my experience:
I was constantly running to the bathroom for about two or three weeks after I started.
If weight loss is your goal then I do have some good news (but this is really only if you truely are gluten intollerant) after the first 3 weeks of no exercise what so ever I lost 12 pounds. At that point I got really excited and started hitting the gym and now I am 6 weeks into my diet and have lost 21 pounds after putting on about 5 pounds of muscle and my body has changed dramatically. I always thought I was genetically fat but it turns out gluten intollerance runs in my family and I got on the diet after seeing the results of my other family members who did the same.
All of these results are with zero time in the gym or doing any sort of cardio
My aunt who first started the diet has lost 37 pounds in the 7 months she has done it (she was relatively thin to begin with.
My mom and another one of my aunts started it at the same time and one lost 29 in 5 months while my mom lost 51 (my mom was the heaviest)
My uncle started it 4 months ago and he has lost 35 pounds.
The really amazing thing is that with the exception of myself all the people I listed are in their late 40's or early 50's (I'm 21) and have always struggled with being overweight or even obese. If you havent visited a professional about the diet then I suggest you do so because there are many other factors that may contribute. For example My mom, my aunt, and I all have B12 defficency and are also unable to process red meat while my uncle discovered he is allergic to quite a few fruits. Hope this was helpful in some way i kinda rambles lol

I have not been tested for celiac or any other gluten related issues, I am just curious if anyone has tried a Gluten free diet for any other reasons. If so, please discuss pros and cons of your experience.
Answer: My wife tried a Gluten free diet, because she suspected she was gluten intolerant, She felt better after a week, but she has accidentally injected gluten several times since. Pro, in general she feels better and has more energy, Cons, she has to be very carefully with what she eats, and has to check other items like chap stick lotions and vitamins. How long should I be on a GLUTEN FREE DIET before I know if it is helping?
I have Chronic Fatigue Syndrome, and was suggested that I try a Gluten free diet to see if it will help. Ive been on it for 4 weeks and was told to go at least 6 weeks on the diet. I havent seen any changes in how I feel. Ive been told that I could try the diet for three months to see how I feel. I want to know if I should be seeing a change already or to go for a three month stretch.
Answer: Ok, couple of questions first.
How sure are you that you have completely eliminated gluten from your diet? Actually, the fact that you are wanting to come off it may be an indication that you are following it properly, but we are all different, so... How many take out meals have you had in the 4 weeks? Almost certainly, any take away meal will contain gluten in one form or another. Have you eaten any Chinese or Thai food? Did you spend the huge sum needed to buy gluten free soya sauce when you cooked it? Have you eaten any low fat yoghurts or seafood sticks? They contain gluten.
I'm sorry if I sound as if I'm nagging or anything, I'm just trying to point out the many ways you could be ingesting gluten without realising it. And there are others.
Now, if you are sure you have been gluten free for the past 4 weeks, and you are also sure that you see no difference in your energy levels, then most likely it isn't doing anything for you. But before you go overboard and head off to the shops to buy in a load of bread, pastries, cakes and cookies, just try something like maybe a pot noodle, and see what your reaction is. Don't forget the reaction may be delayed by up to 36 hours.
If there's no reaction, then you might like to try dairy instead of gluten as your potential irritant.

Baked potatoes are a great choice... really anything as long as you don't add anything with gluten in them. Be careful about condiments, lots of gluten that you wouldn't think do.

I started a Gluten free diet three days ago. When should I notice any benefit from it ?Id like to lose some weight and just feel better.
Answer: I have celiac disease. I noticed my first relief from some of my symptoms in 3 days. Other symptoms took months to go away. Improvement in general well-being and energy and weight loss happened slowly, but steadily. For some people, noticeable improvement takes a long time on the diet.
Many people gain weight once they start a gluten-free diet, because their damaged intestines weren't absorbing the food they ate, so they couldn't get the nutrition they needed no matter how much they ate.
Others lose weight, because their bodies have been telling them they are starving for nutrients, so they constantly feel the need to eat to satisfy cravings; or because gluten intolerance can throw the thyroid or hormones out of balance and cause weight gain; or simply because, by cutting out gluten, they are eating fewer calories and are eating a larger percentage of healthier, non-processed foods, like meat and vegetables instead of, say, pizza.
If you are trying this as an elimination diet, you could re-introduce gluten after 3-6 weeks and see if you react negatively to eating it.

If you are on a GLUTEN FREE DIET, what foods do you miss the most, and what have you replaced them with?
I eat a gluten free and wheat free diet, but I really miss fresh white french bread, still warm from the oven. I have replaced this with Sainsburys Free From Part Baked Baguettes, which go some of the way to satisfying my craving.
What foods do you miss, and more importanly what have you found you can eat similar, but gluten free, that replaces it?
Answer: White bread, brown bread, french bread, Irish soda bread, raisin bread, sour dough bread, banana bread, lemon poppy seed bread, potato bread, Indian fry bread, toasted bread, rye bread, povatitsa bread, corn bread, moldy bread, sandwich bread, sweet bread, and communion bread. What foods are staples in a dairy and GLUTEN FREE DIET?
Im going on a dairy and Gluten free diet because of complications with psoriasis and was wondering which foods are commonly consumed by people who eat this way.

Answer: I would suggest you check out the low carb recipe sites. Their recipes are almost all lactose & gluten free.
Gluten is also used in foods in some unexpected ways, for example as a stabilizing agent or thickener in products like ice-cream and ketchup.
Lactose is usually the allergen in milk but you should be able to have cheese, butter, whey protein, cream and probably even yogurt. I have been low carbing for nearly 6 years and my diet is very high in seeds now. I eat flax seeds & chia seeds almost every day. Chia seeds really have no taste, and swell up absorbing 10X their weight in fluid, an ounce will make 10 oz of food. I usually include them as half the volume of most all foods.
Chia seeds sound so expensive but 1# will make 10# food - Amazon.com has couple lbs. for $16 shipped to you. I buy in bulk (24#) from getchia.com for $6# with free shipping.
Chia seeds - 3.5 oz is nearly 500 calories, half calories from fat (high in Omega3 fatty acids) 38g fiber 151%DV & 16grams of COMPLETE protein for 6grams carbs & 63% DV Calcium - 95% Phosphorus - 23% Zinc - 9% Copper - 108% Manganese.
Faux tapioca - 2 cups of water, 5 scoops of low carb whey protein powder, stir together & add cup of chia seeds, after they have started to absorb the water, add in 2 cans of coconut milk (or cream and added water) & sweetener if you like and mix it all in. Can be eaten after an hour but will be better tomorrow. Cream a pkg. of cream cheese into a can of pumpkin and add to the faux tapioca for an even more nutritious pumpkin pie pudding.

Answer: I started a low-gluten/Gluten free diet when I got serious about my fitness.
I feel lighter after meals and more able to exercise. Plus my muscle/fat ratio is continually improving. Many people are intolerant to some extent without realising it and many digestive issues can be solved by butting gluten out of the diet.
Plus, while a gluten-restrictive diet is not necessarily calorie restricted, the fact that more of your calories come from protein and the fact many snacks are off-limits often translates to a lower-calorie diet, which has obvious benefits for weight loss.
I wouldn't personally recommend Atkins as a diet plan. I understand using it to lose weight in the short term but I think the macro-nutrient profile of the diet is less than beneficial in the long term. As an alternative I would recommend looking at the Paleo or Primal diet. It's based around fruits, lean meats, root vegetables and so forth. I've been doing that but including dairy products and have seen great results.
Stuff that contains gluten includes bread, pasta, rice and most empty/bulk carbs. After a while, you'll get used to checking food labels to see if stuff is gluten free.

Is it okay to be on a GLUTEN FREE DIET when you go for blood work to test for celiac disease?
I have to go for blood work to test for celiac disease(i can go at any time), but i am currently on a Gluten free diet. If I do have celiac disease, will the test be correct if I do not eat gluten, or do I have to consume gluten so my body will show an immune/antibody reaction to the gluten?

Answer: The blood test checks specifically for antibodies to gluten, so when you stop eating gluten these antibodies will gradually disappear.
This means that the blood test is inaccurate for people who are on a Gluten free diet.
If you want the blood test to be accurate you will need to start eating gluten again regularly.
If the blood test is positive you will then need to continue eating gluten until you have a biopsy to confirm celiac disease.
It's very frustrating! I understand as I had to continue eating gluten before my tests even though it made me feel awful.

Do celiac disease symptoms resolve after following a GLUTEN FREE DIET?
I suspect that I might have some celiac issues with my health... I have extreme hunger, poor digestion, muscle aches and nerve pain.
I know there are blood tests you can take for testing, but I am wondering if you follow the gluten-free diet religiously, if other symptoms will go away (muscle pain, nerve pain) in time.
Answer: Just because you have some of the symptoms that celiac disease causes does not mean you have celiac disease. If you have celiac disease and the nerve and muscle pains are caused by it, they take a long time to get better after you start the Gluten free diet. It would be much better to get tested beforehand and then start the Gluten free diet so that you know if you have celiac disease and have the potential for improvement because of the diet.
On the other hand, if you go gluten free and your hunger and digestion issues clear up, you might be on the right track.
The short answer to your question is that if you have celiac disease, eventually your symptoms will clear up although nerve pain usually takes awhile.

Can someone who needs a GLUTEN FREE DIET also be on a macrobiotic diet?
I have also been diagnosted with diabetes but I am not on meds cause I wanted to exercise & diet instead. My mother & grandmother died from breast cancer & I thing in 2012 we live differently & I want to eat organic, small balanced healthy meals but I dont know about the grains.
What can I do to get enough fiber, keep the sugar low & be gluten free, whew, is this possible. Thank you.
Answer: There are many grains that do not contain gluten. Brown rice, buckwheat, and quinoa are just three examples. Rather than eat bread or pastry, I suggest you prepare the whole grains maybe adding one teaspoon of flax seed for Omega-3. To complete the protein requirement, I'd eat a legume with one of many varieties of beans, peas, and lentils. For calcium, I recommend a few large servings of leafy greens such as kale, collards, broccoli, chard, or spinach. These leafy greens contain lots of calcium, iron, and protein. Take a supplement for vitamin D if you don't get much sun on your skin. This way you can avoid dairy food products with are correlated with cancers, diabetes, and vascular disease.
Diabetes is also correlated with eating too much animal based products and refined ingredients such as salt, sugar, and oils/fats. Dr. Neal Barnard and others have written excellent books about reversal of diabetes through diet. They recommend a whole plant based diet which is a well balanced vegan diet.

Is abdominal pain on a gluten-free diet normal for someone with Celiac Disease?
I have Celiac Disease and Ive been on the gluten-free diet for around 5 days. Is it normal to have abdominal pain? When will the pain subside? Will I feel normal again?
Answer: Yes, unfortunately it's going to take longer than 5 days for you to feel better. When you begin a Gluten free diet the villi will begin to heal. If you've been eating gluten for a long time or the damage is extensive, this can take a long time. I was diagnosed when I was 17 years old and it took me 12 months to feel better. After 6 months I began to feel some improvement.
It's possible that you're not sticking to your Gluten free diet as strictly as you should be. It happens, gluten is in foods that you'd least expect it to be. I'd recommend eating a naturally Gluten free diet, avoid things that you're unsure about and things that are labelled "gluten free". A naturally Gluten free diet would consist of eggs, rice, fish, fruit, vegetables, nuts and fresh meat. There are things you'd never consider to contain gluten, but they do. For example, I was drinking Lipton Peach Ice Tea. I was bored in class, reading the label and it said "contains wheat". Foods labelled "gluten free" are often really expensive and they contain heaps of added calories to keep it together and give it some taste.
Another possibility is that you've become lactose intolerant. When the villi is healing, some people become temporarily lactose intolerant. This didn't happen for me. It's usually not permanent. So if you avoid lactose for a month or two, you may feel better.
Good luck, just stick at it. I know it sucks and you can't eat any yummy food anymore, but it gets easier and when you feel better, it'll be worth it.

A good path requires that you be ever more careful about eating a whole plant based diet that avoids excess alcohol, sugars, refined carbohydrates, MSG, aspartame, GMO, oils/fats, and animal based ingredients.
