Though commonly associated with the Ashkenazi Jewish cuisine of Eastern Europe, they are not necessarily Jewish in origin. Areas like northeast Poland, for instance, know many varieties. A favorite Polish dish is placki węgierskie (placki po węgiersku) — potato pancakes stuffed with a thick, spicy Hungarian goulash. Latkes are traditionally eaten during the Jewish Hanukkah festival although they play no fundamental part in Hanukkah ritual. The custom probably evolved because of the preference for eating fried foods during the festival that celebrates a miracle involving oil in the Temple of ancient Israel. What are some Hanukkah recipes for LATKES and sufganiyot! My first time and it has come up so suddenly!?

How long does it take to make them, whats your favorite recipe for them, when should i make them and eat them tonight?
Answer: I usually eat them with dinner. They take about 1-2 hours to make but it depends on how many you make because making them doesn't take that long but cooking them takes a little bit. I usually put a bunch of potatos, half or less of an onion, an egg, and some olive oil. I don't know the exact amounts because I usually just estimate.

6 Tablespoons flour
1 teaspoon salt
1/4 teaspoon pepper
6 medium sized potatoes, peeled and grated
1 small onion, grated
1 egg, beaten
Sift together flour, salt and pepper into small bowl and set aside. Wash, peel and grate potatoes and onions in large bowl. Stir in beaten egg. Pour dry ingredients into potato mixture and stir well until blended. Spoon mixture into hot oil in skillet and fry until brown and crispy on both sides. Drain on paper towel and serve at once with sour cream.

Answer: Um, I call BS about your pancakes won't be Kosher unless a rabbi makes them! That's funny! Just make them with Kosher ingredients and don't let them touch meat, shellfish, etc.
I was in Cleveland recently and grabbed several kosher Latkes from Corky and Lenny's deli. They reheat really well after a couple of minutes in a frying pan. So go that route if you don't want to cook or if you believe that there's a great secret to making Kosher pancakes. Enjoy and happy Chewbacca!

Answer: Here is my easy family recipe.
5 Potatoes
1 large onion
Salt
Pepper
Matzoh meal (can substitute plain bread crumbs)
1 egg
Salt and pepper to taste
vegetable oil, for frying
Grate potatoes and onions into a large bowl and squeeze all excess liquid out.
Add other ingredients and mix well until combined.
Pan fry in enough oil to just about cover the Latkes. Cook on each side until golden brown and delicious.
Drain on paper towels.
Serve with apple sauce, ketchup, sour cream.
Enjoy!

What kinds of sides are good to serve with LATKES (potato pancakes)?
I mean besides apple sauce and sour cream... are there any veggies etc that go well or should they just be eaten on their own?
Answer: Well, since you are asking for SIDES, I would assume that you mean that the Latkes are the main course, and therefore would not want any meats. I would recommend a type of non-starchy side, as the Latkes themselves are (obviously) starchy. I would go for a side salad with a potent yet non-creamy type of dressing (because a creamy dressing would be redundant with the sour cream served with the Latkes), such as a balsamic vinaigrette, with romaine hearts, baby spinach, arugula, and whatever other vegetables you like, and a type of cooked vegetable, such as sauteed green beans, (possibly with sliced almonds or garlic, if you like it like that). Avoid other tuber vegetables with a consistancy similar to the Latkes, like carrots, as redundant textures have a negative impact on the quality of a meal, regardless of a flavor variation between the two items. Also, unless you are serving the Latkes with apple sauce, you may want to think of a type of fruit to serve with this meal. If you like, you can always make (or just buy), your own cranberry sauce, (or lingonberry sauce for a Scandinavian flair).

Answer: This is how I make mine. They're a mess! But well worth it. I have to scrub down the kitchen after Hannukah!
Two and a half pounds of potatoes...I like red, but you can use whatever kind you like.
Shred them. I used my food processor until I broke the spindle the third time. Now I just use the cheese grater, the big side. Be careful not to get too much knuckle into them. My mom always said that was part of the flavoring ;)
1 medium onion. Grate it on the same side of the grater, right into the same bowl.
1 cup matzo meal
2 eggs
a little salt, a little pepper, white pepper, if you feel like it.
some chives, if you like.
Mix it all up. It is almost easier to just use your clean hands, than a spoon.
Then I get out the big, cast iron frying pan. That works best. and pour in enough olive oil to cover the bottom, and heat it up. When a drop of cold water sizzles in it, you put the first pancakes in, fry until golden on both sides. When they are done, you put them on paper towels, and salt them immediately.
Serve with apple sauce and sour cream, or just eat them, right out of the pan, really fresh and crisp and burning hot, with a little salt.

Answer: first, Latkes are not always made out of potatoes....they can be made from any number of things.
