How long to cook a brined turkey?
I bought a 22lb Butterball and since Im always on the lookout for the juiciest way to cook poultry, Im thinking of brining it before roasting it. Ive got how to brine it down but I heard it makes the cooking time shorter if you brine it first. Anyone have any idea how long it will need to roast if its been brined first? Or if you have any awesome ideas for a juicy turkey, Im open to more suggestions too!
Answer: Once you brine you will never go back! You'll love it!
Brinking does not make the cooking time shorter. Brining has nothing to do with cooking time.
This misconception might be because you don't baste it... basting prolongs cooking time because you have to keep opening the oven door, and you let out all the heat. There is also this really stupid "cook it low and slow" idea, which is actually the opposite of scientific fact; longer cooking time = drier turkey meat.
But brining, though it will make the bird juicy and flavorful, does not cut the cooking time.
After brining, pat it dry, brush with just a light coating of olive oil or canola oil, sprinkle on seasonings if desired (but the brine will already have it seasoned perfectly, but you can always add more) and put some aromatics/seasonings in the cavity. I like 1/2 onion, some garlic cloves and a handful of rosemary.
Best way to cook it is to put the turkey in a 500 degree oven for about 30 minutes just to crisp that layer of fat just under the skin and brown it nice, then tent it with foil and lower the heat to 350 and cook it until an oven thermometer reads 161 in the thickest part of the breast. Take it out and let it rest 30 minutes (let the juices redistribute while it is hot-- if you cut it they'll just spout it). Carry over heat will bring it up to a perfect 165.
Ignore the pop up timer set to go off at 180.
You really cannot tell how long to cook a turkey... because so many things can vary, such as the shape of the bird, how thick the breast is, etc... the only way to be sure it is done to perfection and not overdone is a meat thermometer. However, I usually cook 22 pounders and find about 4 or 5 hours allowance is usually more than enough, that includes resting.
Another tip: don't stuff the bird. Makes it take longer to cook, stuffing harbors bacteria & by the time the stuffing internally is at a safe temp, the bird will be overdone. Also, this can make the stuffing have a mushier texture from too much moisture. Put the stuffing in a baking dish ready to go. After you take the bird out, drizzle some of the bird's pan juices on the stuffing and put it in the oven while the bird rests... the stuffing, and the bird, will both be tastier and safer.
If you really want to present the bird stuffed, just put the stuffing into the bird after it comes out of the oven.

Question:-Are any of you brining your turkey? I brine chickens frequently and find it makes for a moister bird. I have not tried brining my thanksgiving turkey yet.
What type of turkey should we use for brining?
Simply put, what type of turkey should we buy if we want to brine the turkey? Id rather buy a frozen turkey, not a fresh one, so what sorts of labels should I be on the look-out for? Thanks.
Answer: ~You can use fresh or frozen turkey but the turkey must be defrosted before you can brine it.
Also, make sure the turkey is dead first. Try brining a live one with its wings flapping -- it's not a pretty picture.

And does it make it taste salty? Im cooking Thanksgiving dinner this year and have heard so much about brining. How exactly do you do it? And what does it do to the turkey?
Answer: Alll brining does is add moisture to the turkey so when you cook it, it stays moister than without brining.
The salt washes off and will not change the taste.
A better trick (and quicker) is to use butter (or oil) and add hebs, like Rosemary... and garlic if you like and mix it into a paste. Rub this paste 'under' the skin, as far as you can reach. It imparts amazing flavor, keeps the moisture in and crisps up the skin even more. You will not be disappointed - believe me! Your guests will ask you how you made a turket look/taste sooooo good!

If I bought a mass produced turkey from a grocery store e.g Jennie-O or Butterball, and theres already a 7 or 8% solution injected, would I still able to brine it? If so, would I need to cut back on the salt?
Answer: You can brine it, but it's unlikely to have any positive effect. The injected solutions are optimized to put as much liquid filler into the bird as it can hold.
If you can't find an unprocessed bird locally, and have to go with the Butterball, etc, save your time and energy for marinading or otherwise treating the bird for additional flavor. A brine will not do anything for you.

Answer: You can brine just about anything! If your turkey has been butchered into parts you do not need to brine them as long as you would a whole turkey. I would brine a whole bird for 24 hours. If you're brining all of the turkey parts I'd do them for 8 to 10 hours.

Answer: Not sure what you call them there, here in the US they are coolers. You put ice in them and keep things like beer cold when you are out at a beach or park. Here is a link to a picture. Answer: If it has that much sodium per serving then it is already brined. Most sellers to the public do it now to make the turkey better.

Is it safe to eat brined turkey if you have high blood pressure?
I want to prepare a turkey using the Good Eats Turkey recipe (Alton Brown/Food Network), which starts with brining the turkey in a salt solution (plus other stuff). However, Im taking an Rx for high blood pressure. With the Rx, my blood pressure is now normal. I exercise and try to eat a balanced diet. Does the turkey absorb so much salt that itd be unsafe for me to eat? I havent been instructed to stick to a low sodium diet.
Answer: A little bit once in a while (which means a little bit once in a while) will not hurt you. Keep off heavily salted things as much as you can for whole body benefit and especially as you have high BP.

and watching Alton Brown's video on brining turkey's. It is very helpful and informative and I am using his technique. Contrary to the one answer, brining does not dry out a turkey but actually moistens it.
Oh, and don't use one of those turkey's that has been injected with all those flavorings like you find in the grocery store this time of year. You have to use one that is just plain ol' turkey which can be found at a place like Whole Foods or ask the butcher.

Answer: I have used different brine's in the past in the restaurant and what we have done that works out very well and does not use any room in refrigerator. Around the holidays business always ramps up and sometimes refrigeration becomes like looking for prime real estate, It is hard to find. So what we have done is washed and sanitize your ice chest or cooler and make up your brine and let it cool back down ,then put the brine in your cooler and put 4 or 5 pounds of ice in there and then put our turkeys in there and let them set.We were able to get 2 turkeys to an ice chest. Just remember that you need to cut back on the amount of water when making your brine,because of the ice that you will add so it does not weaken your brine.Just keep ice in there until time to cook those turkeys and still have room in the refrigerator.

Answer: This is Alton Brown's roat turkey recipe that incorporates a brine. I've used it before and have gotten rave reviews -though i did my aromatics a bit differently, as i didn't have some of those things. Not salty at all, just good.
1 (14 to 16 pound) frozen young turkey
For the brine:
1 cup kosher salt
1/2 cup light brown sugar
1 gallon vegetable stock
1 tablespoon black peppercorns
1/2 tablespoon allspice berries
1/2 tablespoon candied ginger
1 gallon iced water
For the aromatics:
1 red apple, sliced
1/2 onion, sliced
1 cinnamon stick
1 cup water
4 sprigs rosemary
6 leaves sage
Canola oil
Combine all brine ingredients, except ice water, in a stockpot, and bring to a boil. Stir to dissolve solids, then remove from heat, cool to room temperature, and refrigerate until thoroughly chilled.
Early on the day of cooking, (or late the night before) combine the brine and ice water in a clean 5-gallon bucket. Place thawed turkey breast side down in brine, cover, and refrigerate or set in cool area (like a basement) for 6 hours. Turn turkey over once, half way through brining.
A few minutes before roasting, heat oven to 500 degrees. Combine the apple, onion, cinnamon stick, and cup of water in a microwave safe dish and microwave on high for 5 minutes.
Remove bird from brine and rinse inside and out with cold water. Discard brine.
Place bird on roasting rack inside wide, low pan and pat dry with paper towels. Add steeped aromatics to cavity along with rosemary and sage. Tuck back wings and coat whole bird liberally with canola (or other neutral) oil.
Roast on lowest level of the oven at 500 degrees F. for 30 minutes. Remove from oven and cover breast with double layer of aluminum foil, insert probe thermometer into thickest part of the breast and return to oven, reducing temperature to 350 degrees F. Set thermometer alarm (if available) to 161 degrees. A 14 to 16 pound bird should require a total of 2 to 2 1/2 hours of roasting. Let turkey rest, loosely covered for 15 minutes before carving

would it be bad to leave a turkey in a brining solution for 3 days?
I am going to my sisters house, and I have agreed to cook the turkey, and I am also doing a pork butt roast with a peach sauce. I have brined a turkey before, but only for 24 hours. I also have to brine the pork roast with brown sugar and kosher salt. So would it be bad to brine both for 72 hours?
Answer: Yes. Alton Brown from food network does a very nice explanation of how brining works and if left in for too long; the meat will fall apart, the skin won't crisp up, and the drippings or the meat itself may be too salty for most peoples taste. There is a video of it on youtube but it isn't working right now. I'm sure it'll be on food network again almost every night this week.
