EASY NO FAIL PIE CRUST
2 c. all purpose flour
1/2 tsp. salt
1/3 c. buttermilk
2/3 c. vegetable oil
Measure flour and salt. Add milk and oil. Stir only until dry ingredients are blended in. Divide dough in half. Roll each portion between 2 pieces of wax paper. Remove top layer of wax paper and transfer crust into pie plate with bottom wax paper still intact and on top. Remove wax paper from crust and shape edges as desired. Repeat with second portion of recipe. So easy and delicious.

1 stick butter (room temperature)
1 c. flour
2 tbsp. sugar
Work with hands until dough almost holds together. Press into pie plate. Bake 375 degrees about 15 minutes.

Can this PIE CRUST RECIPE be correct - it says oil is optional?
I have Pastry Flour and Im looking at the back of the bag and there is a Pie crust recipe in the back and it asks for:
1 Cup Pastry Flour
6 Tbsp Vegetable Oil (optional)
3 Tbsp Cold Water
Every recipe every where else says to use cold butter or oil. Or can I make this pie crust without oil? Wont it crumble apart?

Answer: I don't understand why the oil is "optional" because it isn't. You have to have a fat of some kind to make pie crust.
I have a recipe for a great crust that uses oil, and it is my favorite because it is delicious and so easy. Flaky crust is often nice to look at, but it is my observation that they are often flavorless.
Easy Oil Crust (makes a double crust)
2 cups all purpose flour
2/3 cup salad oil
1 tsp salt
3-5 Tbsp ice cold water
Blend salt and flour. Add oil and about 3 Tbsp of the water. Stir with a pastry fork until blended. The amount of water you need depends on relative humidity and moisture in the flour, so add a little at a time until the dough is soft enough to roll out and keep it's shape.
Divide dough in half. Tear off 3 sheets of waxed paper that are the approximate size of your pie pan. Wet counter with a clean damp paper towel. Lay down one sheet of paper and seal it to the counter with your hand. Put half of dough on paper, cover with a second sheet, and roll out. When you have a crust large enough to fill your pan, pick up the bottom paper with the dough and place upside down in the pan. Carefully peel off the paper and mold to the pan. Add filling. If you want a top crust, repeat waxed paper procedure and lay over filling---seal edges of crust with your fingers and crimp. Poke a few holes in crust to let steam escape.
I use a fruity olive oil for savory recipes like chicken pot pie, and it is wonderful. For fruit pies, I use a neutral vegetable oil.

I have a ton of apples and want to make an apple pie, but dont have a pre-made crust (those are the best). The pie crusts that I have made from scratch before have ended up being chewy or just taste weird. Does anyone know a good recipe?

Answer: 1 1/2 cups all purpose flour
1/4 teaspoon salt
1/3 cup shortening
3/4 tablespoons cold water
In medium bowl with fork, mix flour and salt. With pastry blender, or 2 knives used scissor fashion, cut in shortening
Sprinkle in cold water, a tablespoon at a time, mixing lightly with fork after each addition, until pastry just holds together.
Shape dough into a ball. On lightly floured surface, and floured rolling pin, roll dough until about 1/8 inch thick.
Turns out pretty good and flakey.

Could I use textured vegetable protein in a PIE CRUST RECIPE?
Im trying to go on a low-carb, high-protein vegan diet, and I would like to include lots of textured vegetable protein (TVP), also known as textured soy protein. I have been using a lot of TVP in vegetable soups, but that is starting to get a little boring. I would like to figure out how to use TVP along with fruit, such as in a pie or cobbler crust. Could I use TVP instead of flour, and come up with, say, a TVP crust for a blackberry cobbler?
Any similar recipes that substitute TVP for flour also would be helpful, like a raisin cookie recipe using TVP instead of flour, or even a biscuit using TVP instead of flour. Thanks.

Answer: TVP doesn't make a good flour substitute! You *can* make a low-fat pie crust by using soft tofu instead of shortening though. If you want a lot of good recipes for using TVP I'd recommend "The new Farm Vegetarian Cookbook" that is available through Abe books or Amazon.
You *do* realize (I hope) that high-protein low-carb diets are really unhealthy don't you? Screws your body chemistry big time! Ketosis, liver problems, gall bladder problems, stones *and* calcium depletion are just a few of the problems with that diet.

to make a healthy (ier!) version of blackberry pie. Can anybody help? Or, any whole wheat pie recipes would be fabulous!
Answer: I am a former chef and while it is comendable to want to make a healthier pie, whole wheat flour has very little gluten so if you do us it, it would have to be a 80-20% ratio with regular pastry or all purpose flour, other wise you will need a chainsaw to cut the pie, I would add some whole grain cereal, flax meal or oat four, us a lower fat shortening and/or diet margarine.

What makes a softer pie crust? Shortening or butter? I want this pie crust to be phenomonal, I know that the butter or shortening should be really cold and well chilled, I know that it should have really cold water, and that you should leave it in the fridge an hour after making it so it wont be sticky, and will be easier when rolling out.
Answer: This is a basic white flaky pie crust, made in the food processor. The secret to good crust is to have everything very cold and to handle it as little as possible. Use frozen or almost frozen lard, butter, and/or shortening as your fat and ice water, and then chill the dough well before rolling. Process the dough as little as possible and use only the amount of water needed to allow you to form it into a ball, not the machine.
Ingredients
1 1/2 cups all-purpose flour
4 tablespoons unsalted butter, cubed
5 tablespoons shortening
1/2 teaspoon salt
3 tablespoons ice water
Method
Measure the flour into the processor with the regular blade attached. Add the unsalted cubed butter, and the cubed shortening.[Your fat should be frozen or very cold. You may vary the proportions, or use some lard, but the total should be 9 tablespoons]. Add salt. Pulse three times with three counts per pulse to lightly mix the ingredients.
With the motor running, pour ice water into the workbowl just until the dough just starts to get noticeably crumbly. Don't wait until it is a big clump or it will be way too wet and will turn out tough.
Stop the machine.
Dump the crumbly dough into a bowl, and gather the dough into a ball with your hand. you can squeeze it a bit to make it stick together. If it just won't form a ball, add a tiny bit more water. [Note that if you are making crust in the food processor, you will use less water than most recipes call for].
Wrap your dough ball in wax paper or plastic wrap and chill it about 30 minutes in the refrigerator. Roll it out on a preferably cold surface. Use your favorite pie recipe for baking.

Answer: Pie crust is supposed to be flaky, and you use well chilled butter or shortening; and don't overwork the dough. So, you could try making it with room temperature butter and working the dough more - that would make it tougher and chewier

Basic Flaky Pie Crust
INGREDIENTS
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup shortening, chilled
3 tablespoons ice water
DIRECTIONS
Whisk the flour and salt together in a medium size bowl. With a pastry blender, cut in the cold shortening until the mixture resembles coarse crumbs. Drizzle 2 to 3 tablespoons ice water over flour. Toss mixture with a fork to moisten, adding more water a few drops at a time until the dough comes together.
Gently gather dough particles together into a ball. Wrap in plastic wrap, and chill for at least 30 minutes before rolling.
Roll out dough, and put in a pie plate. Fill with desired filling and bake.

lost PIE CRUST RECIPE?
My grandma used to make a pie crust (without a written out recipe, of course) and I cant figure out how she did it!
It had a grahamcracker consistency and was kind of hard (but not flakey). My mom also remembers somthing about boiling it (if that makes any sense).

1 c. Crisco
1/2 c. boiling water
Beat together until creamy; let cool. Add:
1 tsp. salt
Pinch of baking powder
Pinch of sugar
3 c. flour or enough to handle easily
This makes 2 double crusts pies. Never fails. Leftover dough can be kept for several days.

Decant the loose dough onto a piece of plastic wrap. Using the wrap, fold the loose dough towards the middle and press with the back of your hands to form dough. Split into two pieces and wrap each and chill for at least 4 hours before using. Dough can be made ahead for up to one week.

I want to make a pumpkin pie today and an apple pie tomorrow. Can I make the pie crust today and keep it in the fridge? I believe I can. Do you have a good crust recipe thats flaky and delicious? Will you share it with me please? Thanks
Answer: Homemade Pie Crust:

8 servings 2 pie crusts
2 cups all-purpose flour, sifted
1 teaspoon salt
2/3 cup butter or shortening
5-7 tablespoons cold water
Put flour into a mixing bowl with the butter.
Using a pastry cutter, cut the butter into the flour.
add salt and water.
Mix until dough is formed.
Roll out on flat surface.
Bake at 375 degrees until brown.

I am looking for a new pie and Pie crust recipe, since the pie (my first) I made last year was very bland and the crust was not very flaky and tender. I want to try something new for this Thanksgiving and hope to improve upon last year.

My dad HATES sweet potatoes but he scarffed this up like nothing!
SWEET POTATO CRUNCH
Mix in large bowl --
-2cans drained sweet potatoes
-1/4 c melted margarine or butter
-3 eggs
-1 tsp vanilla
-1/2 cup brown sugar
Spoon into 1quart casserole dish-sprayed w/Pam.
For topping, mix --
-3TB butter/margarine
-1/2 cup brown sugar-packed
-1/2 cup chopped walnuts or pecans (this is optional)
-1/3 cup flour
Sprinkle topping mixture on top and bake @ 350 for 30 minutes until top bubbles.
I also have a recipe similar to this that uses pumpkin instead of sweet potatoe and it's served chilled...also YUMMYLICIOUS!!! (I'll be glad to email it to you if you'd like, just let me know!)

5-cups flour
?-crisco
?-salt
1 egg, 1-Tablespoon vinegar in a cup and enough cold water to measure 1 cup
I really want this recipe. It is my very favorite.
Answer: I'm a professional baker. I understand your recipe, even though I don't have the exact one near me. The following amounts and instructions will give you the crust you want--you have the ingredients correct. Depending on the size of your pie pans and how thinly you roll, this recipe will give you 2 to 3 double pie crusts. (In my own case, I'd probably get 5 - 9" deep dish single crusts from this recipe).
Your recipe would be 6 c flour, 2 1/2 c Crisco, 1 Tbsp salt, and 1 egg, 1 Tbsp vinegar and enough ice water to measure 1 cup.
Beat the egg and vinegar to mix well. Add enough water and a couple ice cubes to equal 1 cup. Set aside.
Mix together flour and salt. Cut in Crisco until some pea-sized and smaller lumps remain. Add the water 2 Tbsp at a time, tossing the mixture with a fork. When the mixture sticks together easily, smash it into a ball, and fold the dough ball over itself in a sort of kneading motion, no more than 4 or 5 times. Divide the dough into 3 portions (each one making a double crust pie), and refrigerate the dough for at least 30 mins before rolling out.
If you have the freezer space, my grandma would make this dough, then roll it out, put in a pizza box with waxed paper between the layers, and freeze it.
One last note: You can make quantity pie crusts using the following formula: 1 c flour, a scant (about 1 Tbsp less than) 1/2 c fat, 1/2 tsp salt, and about 3 Tbsp ice water + 1 tsp vinegar. Increase these amounts as you need. Each unit will make about 1 single-crust pie. You can replace some of this liquid with an egg or egg yolk. Personally, I'd use only the yolk for a more tender crust.
