After I bake a smoked turkey can I freeze the leftover turkey to use in other recipes?
I was given a 10 lb smoked turkey with no instructions. Ive never reheated or baked a smoked turkey before. It is thawing in the refrigerator. Can I freeze the leftover portions so I can use them in other recipes.
Answer: The smoked turkey is fully cooked. All you have to do is heat it to serving temperature. If you want it cold for sandwiches just slice. You can freeze the turkey again but it may loose some of the quality. It should stay for a while in the refrigerator though.
The back will make a great base for a soup. If you don't want to eat the wings or legs use them in the soup as well.
Do not over heat the turkey, if you want it hot I would suggest heating gravy and placing the slices in the hot gravy. Over heating can make it dry out.

What is your favorite Thanksgiving turkey leftover recipe?
I always cook a very big turkey for Thanksgiving and have lots leftover. I usually eat sliced meat for 2 days and only have one good recipe for leftovers - turkey lasagna. Any other good recipes?
Answer: I take the left over stuffing and press it into the bottom of a baking dish. Then I bake it, making a crust. I slice and dice leftover turkey and reheat it in the leftover gravy. I pour that over the stuffing and top it with the leftover mashed potato's and bake until the potato's brown. It makes a fantastic casserole, and the kids loved it.

Quick Chicken Casserole
3 cups cooked, chopped chicken or turkey
1-16oz. package frozen broccoli florets, thawed
1-10oz. can cream of chicken soup with ¼ cup milk
2/3 cup mayonnaise
1 cup shredded cheddar cheese
Salt and pepper
1 ½ cups crushed cheese crackers
Combine chicken, broccoli, soup, mayo, and cheese, salt and pepper to taste. Mix well. Pour into buttered casserole dish and spread cheese crackers over top. Bake uncovered at 350 for 40 minutes or until bubbly.
Easy Chicken and Biscuits
2 boneless, skinless chicken breasts, cut into bite-size pieces
2 T. oil
16 oz. frozen veggies, thawed
1 can cream of celery soup
¾ cup water
½ t. chicken bouillon granules
1 T. Worcestershire sauce
¼ t. seasoned salt
Salt and pepper to taste
8 oz. tube refrigerator biscuits
Cook chicken in oil until no longer pink and juices run clear. Drain. Combine all ingredients, except biscuits, in a medium saucepan. Heat until bubbly. Spread into 9x5 loaf pan. Place biscuits on top, bake at 325 for 20-25 minutes or until biscuits are golden.
Easy Chicken Pot Pie
4 chicken breasts, cooked, skinned and deboned
40 oz bag frozen mixed vegetables
4 small potatoes
2 cans cream of chicken soup
4 Pillsbury ready pie crusts (in the dairy case)
Directions
Cook vegetables with potatoes until done. Drain and add soup and cut up chicken. Season to taste. Put into two unbaked pie shells. Top with pie crusts (cut vents). Bake at 350 degrees for
1/2 hour or until brown. Cool a bit before cutting.
Spicy Chicken and Rice
3 cups cooked, cubed chicken
2 cups cooked rice
1 can fiesta nacho cheese soup
1 can tomatoes and chopped green chilis

Here is a recipe for using up left over Thanksgiving turkey.
I just developed it today and it is good. To 4 cups of chicken stock add 3 whole cloves, l/4 cup of red wine. l teaspoon of garlic and l l/2 cup of pearl barley. Cook until barley is only slightly tender, but not mushy. This takes about l/2 hour. You might have to add water as this cooks. When barley is almost tender, add 4 chopped carrots, 2 stalks of celery, chopped, and chunks of left over turkey. (The breast seems to taste the best in this soup). Cook until veggies and barley are tender. Sprinke with a dash of dill weed and freshly ground black pepper. Adjust water if necessary.
Gourmet Turkey Sandwich
Sourdough bread
Jellied cranberry sauce
Cream cheese
Leftover turkey meat (white meat, preferably)
Spread cranberry sauce and cream cheese on opposite sides of bread, and then simply layer on some cold left- over turkey meat (I personally prefer slices of white meat in this sandwich).
Turkey-Stuffed Manicotti
2 tablespoons butter, melted
4 cups cooked turkey meat, chopped or shredded
2 cups ricotta cheese
Ground black pepper to taste
1/2 cup Parmesan cheese
2 green onions, chopped
1 teaspoon dried parsley
1/2 teaspoon rosemary
2 eggs, lightly beaten
4 cups tomato sauce, or 2 jars (15-oz.) spaghetti sauce
16 manicotti shells, cooked until just barely softened
In large skillet, brown turkey in butter for 2 - 4 minutes. Mix turkey with ricotta cheese. Add pepper, Parmesan, green onions, parsley, rosemary and egg; mix well. Cover bottom of baking pans with one cup tomato sauce. **Stuff manicotti shells with turkey mixture; place in baking pan(s) and cover with remaining sauce. Cover baking pan(s) with foil; label and freeze.
Turkey Vegetable Soup
2 (14 1/2-ounce) cans low sodium chicken broth
1 (14 3/4-ounce) can cream-style corn
2 cups cubed cooked turkey
1 (10-ounce) package (3 cups) frozen cut broccoli*
1 (2-ounce) jar diced pimiento, drained
Salt and pepper, if desired
Combine all ingredients in 3-quart saucepan. Bring to a full boil, breaking up frozen broccoli occasionally, over high heat (15 to 18 minutes).
Reduce heat to low. Cover; cook until broccoli is tender (5 minutes). Season with salt and pepper, if desired
HEARTY TURKEY DIVAN BAKE
6 ounces uncooked dried spaghetti, broken into thirds
2 tablespoons LAND O LAKES® Butter
2 tablespoons all-purpose flour
1 cup chicken broth
8 ounces (2 cups) LAND O LAKES® Medium or Sharp Cheddar Cheese, shredded
1/2 cup milk
3 to 4 drops hot pepper sauce
2 cups cubed 1/2-inch cooked turkey or chicken
2 cups frozen cup broccoli
1 (4-ounce) can sliced mushrooms
Heat oven to 350°F. Cook spaghetti according to package directions. Drain. Set aside.
Meanwhile, melt butter in 2-quart saucepan over medium heat; stir in flour until smooth and bubbly (1 minute). Stir in chicken broth with wire whisk; continue cooking, stirring constantly, until mixture comes to a full boil (4 to 5 minutes). Boil 1 minute. Remove from heat. Stir in 1 1/2 cups cheese until melted. Stir in milk and hot pepper sauce.
Combine cooked spaghetti, turkey, broccoli and mushrooms in greased 2-quart casserole. Add cheese mixture. Top with remaining cheese. Bake for 25 to 30 minutes or until bubbly around edge.
WILD RICE-TURKEY MEDLEY
3 cups cooked wild rice
3 cups chopped cooked turkey
1 (16-ounce) package frozen French-cut green beans, thawed
1/2 cup chopped red bell pepper*
1 (17-ounce) jar prepared Alfredo sauce
1/2 cup dried bread crumbs
2 tablespoons LAND O LAKES® Butter, melted
Heat oven to 350°F. Layer wild rice, turkey, green beans and red pepper in 12x8-inch ungreased baking dish; top with sauce.
Combine bread crumbs and butter in small bowl. Sprinkle over casserole. Bake for 45 to 50 minutes or until edges are bubbly and mixture is heated through.
*Substitute 1 (2-ounce) jar chopped pimiento, undrained.
TIP : A refrigerated Alfredo sauce can also be used.
TIP: Prepare casserole up to 12 hours ahead. Cover and refrigerate. Increase baking time to 50 to 55 minutes.
Jambalaya
1 lb. leftover holiday turkey, cubed
1 large onion, chopped
1 bell pepper, chopped
3 - 6 cloves garlic, minced (amount to taste; I like lots)
4 ribs celery, chopped
2 small cans tomato paste
1 28-oz. can tomatoes
8 cups chicken broth
2 teaspoons cayenne pepper
2 teaspoons black pepper
1 teaspoon oregano
1/2 teaspoon thyme
2 bay leaves
Salt to taste
4 cups long-grain white rice, uncooked
In a sauté or frying pan, sautee diced turkey meat in salt, black pepper and cayenne pepper until just warmed through. In a large pot, sauté the onions, garlic, peppers and celery in oil until onions begin to turn transparent. In the same pot, add the tomato paste and let it brown a little. Once the vegetables are translucent deglaze the pan with the about 2 cups of the stock, scraping the bottom of the pan to mix up any browned bits, and stir until smooth, making sure the sautéed vegetables, paste and stock are combined thoroughly. Add the remaining seasonings, tomatoes and salt to taste. Cook over low-medium heat for about 10 minutes. Add the turkey and cook another 10 minutes. Add the rest of the stock, and stir in the rice, combining thoroughly. Cook for about 20-25 minutes, or until the rice has absorbed all the liquid and is cooked through. Turn the heat down to low-medium and let the sauce thicken up a bit, with the pot uncovered, stirring frequently, for about 10 minutes. Stir thoroughly to combine all ingredients.
HOLIDAY HOT TURKEY SANDWICH
1/2 cup Leftover Turkey Gravy
2 slices White Bread -- Thickly sliced
2 tablespoons Whole Cranberry Sauce, or 2 slices of Jellied Cranberry Sauce
6 ounces Leftover Roast Turkey -- sliced
1/2 cup Leftover Mashed Potatoes
Heat gravy slowly in small saucepan or in microwave at 50% power 3-4 minutes. Place bread on dinner plate, slightly overlapped. Spread (or lay) cranberry sauce on top of bread. Top with turkey. Spoon potatoes alongside, and ladle hot gravy over all. Serve at once.
BLT TURKEY SALAD
Prep.Time: 30 minutes
1/2 cup Mayonnaise
1/4 cup bottled Barbecue Sauce
1 tablespoon Onion -- finely chopped
1 tablespoon Lemon Juice
teaspoon Pepper
8 cups Lettuce -- torn
2 large ripe Tomatoes -- chopped
2 cups cooked Turkey or chicken -- cubed
8 slices Bacon, diced -- cooked and Crumbled
2 Hard-cooked Eggs -- sliced
Combine mayonnaise, barbecue sauce, onion, lemon juice and pepper in small bowl; mix well. Cover and chill 1-2 hours. Meanwhile, toss lettuce, tomatoes and turkey or chicken in large salad bowl. Put salad mixture on serving plates; sprinkle bacon over top and garnish with slices of egg.
TURKEY TETRAZZINI
1 pound Spaghetti -- broken in pieces
1/2 cup Butter
1 medium Onion -- chopped
1 pound fresh Mushrooms -- sliced
1 tablespoon Lemon juice
1/2 cup Flour
1/2 teaspoon Nutmeg
1/4 teaspoon Paprika
1/2 cup Dry Sherry
3 cups Turkey Broth, or Chicken Broth
1 cup Half and half
Salt and Pepper to taste
3 cups cubed Cooked Turkey
1/4 cup grated Parmesan cheese
Preheat oven to 350 degrees; grease a 13x9x2 baking dish. Cook spaghetti according to package directions; drain and spread evenly in bottom of baking dish. In a medium saucepan, melt 2 tablespoons of the butter; saute onion and mushrooms until soft. Stir in lemon juice; remove from pan to plate with slotted spoon. In the same pan, melt remaining butter; stir in flour, nutmeg and paprika. Cook and stir until smooth, about 1-2 minutes. Gradually stir in sherry and broth; cook and stir unthil thickened. Stir in cream; add onion mixture, salt and pepper; warm over low heat until heated through, stirring occationally. Spoon mixture evenly over spaghetti; sprinkle with Parmesan and additional paprika. Bake 30 minutes or until cheese is golden and bubbly.
TURKEY CASSEROLE
1 package Scalloped Potatoes mix
1/8 teaspoon Poultry Seasoning
1 3/4 cups Boiling water
1 can Cream of Chicken Soup (10-oz.)
2 cups cubed cooked Turkey
1/2 cup chopped Onion
1/2 cup thinly sliced Carrots
1/4 cup thinly sliced Celery
1/2 teaspoon Salt
1/4 teaspoon Pepper
1/4 teaspoon Oregano
3 tablespoons Dry bread crumbs
1 tablespoon grated Parmesan cheese
1 tablespoon Butter
Preheat oven to 400 degrees. In a large bowl, blend sauce mix and poultry seasoning; stir in boiling water. Whisk in soup; mix well. Add potato slices together with the remaining ingredients; mix well. Spoon into a greased 2-quart casserole; sprinkle with breadcrumbs and Parmesan; dot with butter. Bake 45-55 minutes, or until top is golden and bubbly.
CATALINA POTATO-TURKEY SOUP
1 medium Onion -- chopped
1 clove Garlic
2 tablespoons Vegetable Oil
1 can Tomato Paste (6-oz.)
6 cups Chicken Broth
2 large Potatoes -- peeled and cubed
2 cups cubed cooked turkey
1/2 teaspoon dried Oregano
1/4 teaspoon ground Cumin
1/2 teaspoon Salt
1/2 teaspoon Pepper
2 tablespoons chopped fresh Cilantro, or 1 tablespoon dried Cilantro leaves
3/4 cup shredded Monterey Jack Cheese
In a Dutch oven, saute onion and whole garlic clove in oil until onion is soft; mash garlic with a fork. Add tomato paste and broth, blending well to dissolve tomato paste. Add the potatoes; bring to a boil; cover and simmer 10 minutes. Add turkey and seasonings and simmer 5 minutes. Just before serving, stir in cilantro and cheese; heat through until cheese is melted.
MY WONDERFUL TURKEY NOODLE VEGETABLE SOUP
STOCK:
1 Roast Turkey Carcass, with some meat left
2 Carrots -- halved
2 ribs Celery -- halved
1 medium Onion, studded with 4 whole cloves
1 Bay leaf
1 teaspoon Salt
1/2 teaspoon Pepper
1/2 teaspoon Poultry Seasoning
1/4 teaspoon Sage
5 quarts Turkey broth, Chicken Broth or Water
SOUP:
Reserved Turkey Stock
1 large Carrot -- thinly sliced
2 ribs Celery -- thinly sliced
1/2 cup coarsely chopped Onion
1/2 package Frozen Mixed vegetables -- unthawed
2 cups cubed cooked Turkey
4 cups uncooked Wide Egg Noodles
Salt and Pepper to taste, if needed
FOR THE STOCK: In a large kettle, place all ingredients; bring to a boil. Remove scum from surface; lower heat; partially cover; simmer over very low heat 3-4 hours. Strain stock into Dutch oven, pressing on carcass and vegetables to extract all juices; discard carcass and vegetables. Cover and refrigerate until cooled or overnight.
FOR THE SOUP: Skim and discard fat from surface of stock; bring stock to a boil; add carrots, celery, onion and frozen vegetables. Cover and simmer 30 minutes. Add turkey and noodles; adjust salt and pepper if needed; cover and simmer 8-10 minutes, or until noodles are cooked and vegetables are tender. (Soup can be thickened with some leftover giblet gravy, if desired.)

My husband and I had sooo much leftover turkey this year. We really had fun finding different ways to use up all that meat.

I have a lot of recipes here's some of my favorites.
TORTILLA TURKEY STACKS
2 7-inch flour tortillas
3/4 cup chopped cooked turkey or chicken
1 tablespoon bottled fat-free Thousand Island salad dressing
1 TB bottled chunky salsa
1-1/2 ts thinly sliced green onion
1/2 C canned vegetarian refried beans
1-1/2 C shredded lettuce
1/2 of a medium tomato, chopped
1/4 C shredded reduced-fat Monterey Jack cheese or reduced-fat Colby and Monterey Jack cheese
1. Place tortillas in a single layer on a baking sheet. Bake in a 350 degree F oven for 10 to 12 minutes or until crisp and light brown. (If tortillas puff during baking, pierce with a fork to allow steam to escape.)
2. Meanwhile, in a medium bowl combine turkey, salad dressing, salsa, and green onion. Set aside.
3. To assemble, spread about 1/4 cup of the refried beans over each tortilla. Top with turkey mixture, lettuce, tomato, and cheese. Makes 2 servings.
*I think this would be good with some sour cream & I used black olives this year. Was a hit!!
THANKSGIVING WRAP
Slice leftover turkey. Spread tortilla with leftover dressing and a layer of sliced turkey, then wrap it up.

TURKEY BURRITO OR TURKEY SOUP
Put into crock pot:
3 C each turkey, cooked, prepared stuffing, mashed potatoes, gravy & broth.
1 onion, cut as you please.
May serve in bowls with rolls or in a tortilla. Optionally add cheese.

Answer: CHOPPED TURKEY SALAD with BALSAMIC VINEGAR
Ingredients
Dressing
2 cloves garlic, minced
1 tablespoon Dijon mustard
3 tablespoons balsamic vinegar
2/3 cup olive oil
1 tablespoon dried Italian seasoning
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Salad
6 cups shredded iceberg lettuce
3 cups chopped leftover cooked Butterball® Turkey
1/3 pound thinly sliced prosciutto, chopped
1/2 pound deli-sliced County Line® Swiss Cheese, chopped
1 can (15 ounces) garbanzo beans, drained, rinsed
6 medium plum tomatoes, chopped
1 cup pitted ripe olives, sliced
8 green onions, thinly sliced (about 1/2 cup)
1/2 cup chopped fresh basil
Directions

Dressing: Combine garlic, mustard and vinegar in small bowl. Gradually add oil, beating with wire whisk until well blended. Stir in Italian seasoning, salt and pepper.
Salad: Combine lettuce, turkey, proscuitto, cheese, beans, tomatoes, olives, onions and basil in large bowl. Add 1/2 cup dressing; toss to coat. Serve with additional dressing, if desired
MEDITERRANEAN TURKEY PAELLA
Ingredients
1 tablespoon olive oil
1 medium onion, chopped (about 1/2 cup)
1/2 cup chopped red bell pepper
2 cloves garlic, minced
1 cup frozen artichoke hearts, thawed
1/4 cup sliced pitted ripe olives
1 can (14.5 ounce) Butterball® Chicken Broth
1 cup water
1 cup long-grain white rice, uncooked
1/2 teaspoon salt
1/2 teaspoon paprika
3 saffron threads, (optional)
2 cups chopped leftover cooked Butterball® Turkey
1/2 cup frozen green peas, thawed
Directions

Heat oil in large skillet over medium heat. Add onions, bell peppers and garlic; cook and stir 2 minutes. Add artichokes and olives; cook and stir an additional 2 minutes. Stir in broth and water. Bring to a boil.
Add rice, salt and paprika; mix well. Stir in saffron, if desired. Cover skillet with lid. Reduce heat to medium-low; simmer 15 minutes. Add turkey and peas; mix well. Cover; cook 5 minutes, or until liquid is absorbed, rice is tender and peas are heated through.
Remove from heat. Let stand 5 minutes. Fluff with fork.

Ingredients
8 ounces dry cheese tortellini, uncooked (about 2 cups)
2 tablespoons butter
1 large onion, chopped (about 1 cup)
1 large carrots, peeled, thinly sliced
2 cans (14.5 ounce each) Butterball® Chicken Broth
1 can (28 ounces) Hunt's® Diced Tomatoes with Basil, Garlic and Oregano, undrained
1 tablespoon chopped fresh basil
1 teaspoon granulated sugar
1 teaspoon salt
1/8 teaspoon ground white pepper
2 cups chopped leftover cooked Butterball® Turkey
Directions

Prepare tortellini according to package directions.
Melt butter in large saucepan over medium heat. Add onion and carrot; cook and stir 7 minutes, or until vegetables are tender. Stir in broth, tomatoes, basil, sugar, salt and pepper. Bring to a boil over medium-high heat, stirring occasionally. Reduce heat to medium; simmer covered 10 minutes. Stir in turkey and tortellini, cook until hot.
WHITE CHILI
Ingredients
1 pound dried small white beans, (such as navy beans) (about 2-1/2 cups), rinsed
3 tablespoons olive oil
1 large onion, finely chopped (about 1 cup)
3 cloves garlic, minced
2 cans (4 ounces each) chopped green chilies, undrained
1 tablespoon ground cumin
1 tablespoon dried oregano leaves
1 teaspoon ground cinnamon
Dash ground red pepper
9 cups Butterball® Chicken Broth, (about 5 cans, 14.5 ounces each)
4 cups chopped leftover cooked Butterball® Turkey
1/2 teaspoon salt
1/8 teaspoon ground black pepper
3 cups (12 ounces) shredded Monterey Jack Cheese, divided
Salsa, sour cream and chopped cilantro (optional)
Directions

Place beans in large saucepan or bowl. Cover with cold water; let stand overnight. Drain and rinse beans.
Heat oil in large saucepan over medium-high heat. Add onion and garlic; cook and stir 7 minutes, or until onion is tender. Stir in chilies, cumin, oregano, cinnamon and red pepper; cook 3 minutes more. Stir in beans and 8 cups of the chicken broth. Bring to a boil over medium-high heat. Reduce heat to low; simmer covered 2 hours, or until beans are tender. (Note: If mixture becomes to dry, add additional chicken broth.)
Stir in turkey, salt and pepper. Stir in 1-1/2 cups of the cheese and cook until cheese is melted. Ladle chili into bowls and top with remaining cheese. Serve with salsa, sour cream and cilantro, if desired.

Answer: I have one! Dice up two cups of turkey and place in a casserole dish. Add paprika, salt and pepper, onion, and cooked noodles. One can of cream of chicken soup and one can of cream of celery soup. One can milk. Mix and place Monteray Jack shredded cheese on top. Bake until heated through.

Answer: I like to shred some turkey in a bowl add some stuffing and cranberry sauce to it mix well and form in to pattys and fry in a little oil till golden brown then flip to other side and cook till golden brown then drain on paper towel in the meantime heat up your left over gravy and pour over and you have a thanksgiving meal in a patty

Answer: Turkey Casserole:
1 6oz pkg. Stove Top stuffing
4 cups chopped cooked chicken
1 bag (14 oz) frozen broccoli 9thawed and drained)
1 can condensed cream of chicken soup
3/4 cup milk
1 1/2 cups shredded cheddar
Preheat oven to 350 F, add hot water to stuffing and stir until just moistened. Mix turkey and broccoli in 13x9 inch baking dish. combine soup, milk, and cheese; pour over turkey mix. Top with stuffing.
Bake 30 min, or until heated thru.

Open-Faced Southwest Turkey Melt
1 T Miracle Whip
2 slices French bread
1/8 t Chili powder
2 T salsa
1/2 cup cooked Turkey
1/4 cup shredded cheddar
Preheat broiler. Spread miracle whip evenly on bread, sprinkle with chili powder. top with salsa, turkey, and cheese.
Broil 4-6 inches from heat for 2 min, or until heated thru and cheese is melted.

Answer: Turkey Enchiladas with Sour Cream:
Notes: Use any favorite, good-quality salsa, red or green, for these enchiladas. The recipe is a great way to use up leftover holiday turkey, but if you don't have turkey on hand, shredded cooked chicken is a good substitute. Serve the enchiladas with a simple Mexican coleslaw of shredded cabbage dressed with lime juice and cumin.
3 cups shredded skinned cooked turkey (see notes)
2 cups sour cream
About 2 cups shredded sharp cheddar cheese (8 oz.)
1 teaspoon salt
1/3 cup vegetable oil
12 corn tortillas
1 jar (16 oz.) medium-hot salsa (see notes)
1. In a bowl, mix turkey, sour cream, 2 cups shredded cheese, and the salt.
2. Heat oil in an 8- to 10-inch frying pan over low heat. Dip the tortillas, one at a time, in the hot oil just until limp, about 5 seconds.
3. Fill tortillas equally with turkey mixture, roll up, and arrange side by side, seam down, in a 9- by 13-inch baking dish. Pour salsa evenly over the top.
4. Bake in a 350° oven until heated through, about 20 minutes. If desired, sprinkle more shredded cheese over hot enchiladas before serving.
Yield: Makes 6 servings

Answer: LEFTOVER TURKEY
White sauce
4 tbsp. butter
6 tbsp. flour
2 c. milk
2 tsp. salt
1/4 tsp. pepper
1/2 tsp. celery salt (optional)
Leftover turkey
1 lg. onion, chopped
Chopped celery
Place leftover turkey in buttered casserole dish. Add finely chopped onion and celery. Season to taste. Pour over mixture the white sauce and top with grated cheese and bread crumbs. Bake at 350 degrees for about 30 minutes or until heated through and crumbs and cheese have browned. This is great! No measuring, it's easy and quick.
OR
"LEFTOVER TURKEY" SOUP
Leftover turkey from 1 turkey
1/4 tsp. poultry seasoning
3 cubes or 3 tsp. chicken bouillon
1 bay leaf
6 c. water
1/2 c. rice or 1 c. noodles
3 med. carrots
2 stalks celery, sliced
2 med. onions, sliced or chopped
2 tbsp. chopped parsley
1 sm. can tomato sauce
In a large saucepan or pot combine first 5 ingredients. Simmer covered for 1 1/2 hours. Remove bones, cut off meat and return meat to broth. Add remaining ingredients to broth. Simmer covered 30 minutes or until vegetables are tender.
TIP: Other vegetables may be added such as corn, zucchini, tomatoes, potatoes, peas, mushrooms, pick what you like.
OR
TURKEY LEFTOVER SURPRISE
1 (6 oz.) pkg. UNCLE BEN'S® wild rice
2 tbsp. butter
1 lb. sausage
3 c. leftover turkey, chopped
2 cans mushroom soup
1 can mushrooms
Cook rice according to package adding 2 tablespoons butter. Saute sausage and drain. Layer ingredients twice in this order sausage, turkey, rice, soup and ending with mushrooms. Bake in a 400 degree oven for 20 minutes.
OR
TURKEY LEFTOVER SURPRISE
1 (6 oz.) pkg. UNCLE BEN'S® wild rice
2 tbsp. butter
1 lb. sausage

Frozen hash potatoes or Potatoes O'Brien
Spray skillet with Pam. Chop turkey in cubes. About 3 cups of potatoes and 2 cups of turkey. If it gets dry, spray more Pam. Heat through until potatoes are done.
TURKEY VEGETABLE SOUP:
3 c. mixed vegetables
1 can stewed tomatoes
2 c. cubed turkey
3 c. water or as much as desired
Heat thoroughly.
TURKEY SALAD:
4 c. chopped turkey
1 sm. onion, minced
1 stick celery, minced
2 pieces garlic, minced
Light dressing as desired
Tossed and serve on lettuce.

Here is one of my favorite turkey left-over's recipes:
Take your leftover turkey and shred it into bite-sized pieces. Also get your leftover stuffing out. Steam some broccoli (or asparagus).
Get a box of Argo corn starch. Make the recipe for "white sauce" that is on the side of the box. Add several pieces of american cheese that has been cut up into small pieces so it melts. Once the cheese is melted and you are satisfied with the taste of the cheese sauce it is ready.
Put your cooked broccoli around the outside of your casserole dish. Place the stuffing in the next "Row" and then put your turkey in the middle. Pour the cheese sauce all over the top.
Cook at 400 degrees until everything is warmed through, about 20-30 minutes.
Note: you could also put your leftover mashed potatoes on the top (after you have added the cheese sauce) for a shepard's pie-like dish.

Answer: I usually freeze most of the meat in small bags and pull out for sandwiches later. My hubby makes soup with whatever i don't freeze.
