I love to make quiche and am thinking about purchasing a ceramic quiche pan. These are larger than pie pans, so a traditional Pie crust wont fit. Do I have to make my own Pie crust, or can I just pour the quiche ingredients directly into the pan? Will it be as good if I do this?
Answer: I make my quiche without a Pie crust. Just use liquid butter and spread all around the pan and then use about 1/2 cup bread crumbs and spread those around, dump out any extra. It works best if you put the pan in the freezer for about 30 minutes before you put in you quiche filling.

How do I keep my PIE CRUST from getting soggy?
When baking pies, the outer crust is always golden brown and flaky, but the Pie crust under the fruit always turns out soggy. This has happened with both fruit pies and custard pies.
Answer: Before you bake your crust, brush the bottom with a beaten egg. Then bake for 15 minutes, let cool, then add filling. Cover the outer edges with foil and bake as usual. When almost done baking, remove the foil and bake till edges are golden.
By brushing egg yolk on the bottom, then baking, you are forming a seal that will help keep moisture out.

What can I do to keep my PIE CRUST from getting soggy when making a cream pie?
Last time I made a lemon pie I brushed the crust with egg whites on the Pie crust before I baked it thinking that would help. Any other ideas?
Answer: I think it helps if everything is VERY cold right from the start---the wet ingredients in the crust need to be very cold when you mix them and cold when you roll the crust out. Then, once it's ready, put the crust in the fridge until it's very cold and then pour the filling to to bake.

Yeah I mean real butter not margarine.
Answer: You can use the buter in place of shortening. I've done that before. The crust won't be quite as flaky as it is with shortening but it will work just fine.

How to keep a two crust PIE CRUST from getting soggy, such as in a peach pie after the first day?
My recipe calls for 2 T cornstarch for a 9" pie. The crust is wonderful the first day, a little soggy the second, and disgusting after that.
Answer: I have a cookbook that suggests baking the Pie crust, with buttered foil and dried beans, inside it, then removing them when the Pie crust is done, baking the top crust in a large round shape, like a big cookie, by itself, and cooking the pie filling in a sauce pan on the stove, until it is thickened. Then you just assemble the different pieces together, right before you eat it. I've never tried it, but can't think why it wouldn't work. Seems a little fussy, though.

What makes a Pie crust shrink when baked and how do you prevent it?
Answer: Gluten strands makes the Pie crust shrink when you bake it. Allowing the dough time to rest between mixing, rolling, and baking will reduce the amount of shrinkage that occurs. Other than that there isn't really anything you can do to avoid it, you just have to remember that its going to shrink up a little bit and roll it out slightly bigger.

Answer: You can substitute exact measurements of butter for other fats, but remeber if it is table butter it already has salt added to it. You can also make a crust with oil, but it is much harder to get a flaky crust with oil.

How exactly do I keep the PIE CRUST edge from burning?
Im baking pumpkin pies and the crust edges keep burning. Ive read that I should put aluminum foil on the edges, but Im not exactly sure how. Is it for a certain amount of time, like the whole cooking time, last 30 minutes, last 15 minutes or what. The pie bakes at 425 degrees Fahrenheit for 15 minutes, then reduce heat to 350 degrees and bake for 40-50 more minutes. Any help would be greatly appreciated. And it is store-bought crusts.
Answer: Trim the edges with foil till that last 10 minutes of baking

Lay the dough on the counter and brush with butter, put a thin even layer of brown sugar and sprinkle with cinnamon. Then roll it up and slice the log every 1-2 inches.
