Answer: 1 1/2 pounds large shrimp (about 16 to 24)
1/3 cup clarified butter
4 tablespoons minced garlic
6 green onions, thinly sliced
1/4 cup dry white wine
2 tablespoons lemon juice, fresh if possible
2 tablespoons chopped fresh parsley
salt and pepper, to taste
Rinse shrimp and set aside. Heat butter in large skillet over medium heat. Cook garlic 1 or 2 minutes or until softened but not browned. Add shrimp, green onions, wine and lemon juice; cook until shrimp are pink and firm, about 1 to 2 minutes on each side. Do not overcook. Add chopped parsley and salt and pepper before serving. Garnish with lemon slices and parsley sprigs if desired.

3 lb Large fresh shrimp - 1/3 c Chopped fresh parsley
Peeled and deveined 2 tb Fresh lemon juice
With tails intact 2 Cloves garlic - crushed
1 c Olive oil 1 ts Salt
Combine olive oil and remaining ingredients in a 13 X 9 X 2 inch baking dish; stir well; add shrimp, stirring gently; cover and marinate in refrigerator for at least 8 hours, stirring occasionally; remove shrimp from marinade, using a slotted spoon; reserve marinade; place shrimp on water soaked skewers; grill over medium hot coals 3 to 4 minutes on each
side, basting frequently with marinade. DO NOT OVER COOK. 8 servings.
Batter-Fried Shrimp (Tom Chien Bot)
* sweet and sour dipping sauce ( CAN BUY FROM SUPERMARKET)
* 1/4 teaspoon turmeric
* 1 pound raw medium shrimp
* vegetable oil, for deep-frying
* 1 tablespoon nuoc mam (Vietnamese fish sauce)
* cornstarch, for dredging
* 2 large garlic cloves, minced freshly ground black pepper
* 1 cup all-purpose flour, sifted
* 2 tablespoons baking powder
* 1 teaspoon sugar
* 1/2 teaspoon salt
1 Prepare the sweet and sour dipping sauce. Set aside.
2 Shell and devein the shrimp, leaving the tail section attached. Combine the shrimp, fish sauce, garlic and black pepper to taste in a bowl. Mix well; set aside to marinate for 30 minutes.
3 Combine the flour, baking powder, sugar, salt, turmeric and 1/4 teaspoon of black pepper in a bowl. Make a well in the center. Stir in 1-1/4 cups of cold water until smooth. Let rest for 1 hour.
4 Heat 2 inches of oil in a wok or deep fryer to 365 F, or until a drop of batter sizzles and rises to the surface. Dredge the shrimp in cornstarch, shaking off any excess. One by one, dip the shrimp in the batter, holding each one by the tail, and coat well. Carefully add the shrimp to the hot oil, a few at a time. Fry, turning once, for 2 to 3 minutes, or until golden brown and crisp. Drain on paper towels. Continue coating and frying until all of the shrimp are cooked.
5 Serve hot, with sweet and sour sauce as part of a meal or as an appetizer.
Indonesian Barbecued Shrimp (With Peanut Sauce)
-DIPPING SAUCE -
1/2 c Peanut butter 1/2 ts Salt
1/2 c Water 1/2 ts Red pepper sauce
1 tb Brown sugar; packed 1 sm Garlic clove; crushed
1 tb Lemon juice
SHRIMP
1 1/2 lb Shrimp; peeled 1 ts Brown sugar; packed
2 tb Vegetable oil 1/2 ts Salt
2 tb Water 1/2 ts Red pepper suace
1 tb Lemon juice 2 Garlic cloves; crushed
Prepare dipping sauce by mixing all ingredients until smooth. Cover until serving time. Make a shallow cut lengthwise down back of shrimp; wash out vein. Mix remaining ingredients in medium glass bowl. Add shrimp; stir to coat with marinade. Cover and refrigerate at least 1 hour. Remove shrimp
from marinade; reserve marinade. Thread shrimp on 6, 15" metal skewers, leaving space between each. Cover and grill shrimp about 4" from medium coals, 10-20 minutes, turning and brushing 2-3 times with marinade, until shrimp are pink. Serve with sauce, and if desired, lime wedges.
Spicy Shrimps in Coconut Milk
* 2 bags of 450 grams each, big shrimps, peeled skins
* 1 heaping tsp of hot Chinese hot pepper sauce (with a lady picture on the bottle)
* 2-3 tbsp of chopped tomato with spices from 976 ml can (I used Pastene
* 1-2 tsps of heapings Lee Kum Kee chilie garlic sauce
* 4 green onions, sliced
* 1 tsp of Hungarian Vegeta seasoning
* 3-4 tbsps chicken stock
* 4-5 garlic, thinly sliced or crushed
* 1 medium onion, chopped
* 2 tbsps heaping oil
* 4-5 hot chilies
* salt and sugar to taste
* 2-3 tbsps of coconut milk
- Heat the oil, saute garlic, onion, chilies, and green onion
- Add in washed and peeled shrimps. Cook until shrimps changed in colors then add in the rest of the ingredients. Taste a bit, if it has reached your desire then turn off the stove.

Answer: I'd go with a hearty California Napa Chardonnay, the butteryness of the Chardonnay will match well with the butter of the scampi, and one with nice acidity will complement the shrimp. I'd recommend the Beringer Napa Chardonnay, should run you around $13.00

Answer: Shrimp scampi
1/4 lb Shrimp
2 Cloves Pressed Garlic
1/4 tsp Salt
A dash of Cayenne
1 Tbsp Olive Oil
2 Tbsp Butter
1 tsp Sherry
I Pinch Lemon Zest
1 Tbsp Chopped parsley
1 tsp Lemon Juice
Defrost the shrimp if they're frozen and peel them. In a small bowl combine the shrimp, garlic, salt, cayenne, and olive oil. Set that aside for a few minutes to let things marinate. If the shrimp are still a little bit frozen be sure to let it sit until they are completely thawed. They'll cook better if they're closer to room temp than cold.
Over medium heat, in a small pan, melt the butter. Don't get the pan too hot. If it's too hot you'll burn the garlic, boil off the yummy shrimp flavor, and probably overcook the shrimp. As soon as the butter melted, add the shrimp. Let them simmer on one side until they're done half way through and then turn them and cook till done. The time will vary depending on many factors, but for the size shrimp I was using here I turned them after about 2 minutes and then cooked them for another minute.
Just before the shrimp are just done (don't over cook them or they'll be tough) add the sherry, lemon zest, parsley, and lemon juice. Stir everything together and cook for a few seconds more. At this point they are ready to serve. I eat them right out of the pan with some crusty bread to soak up the sauce.

24 lg. uncooked shrimp (peeled, deveined, leaving tails on)
4 lg. garlic cloves, finely minced
1/2 stick butter
1/2 c. olive oil
1 c. white wine
1 tbsp. chopped parsley
Lemon wedges
bread crumbs
In a skillet, saute a few spoons of bread crumbs, parsley and garlic until lightly browned. (Add garlic after a few moments so that it doesn't get brown.)
Add shrimp, marinade and juice from a couple of lemon wedges and cook until shrimp are pink (a few minutes) and juices in pan are bubbling hot.
Serve shrimp with scampi sauce for dipping, and garnish with lemon wedges
OR
Shrimp scampi
3/4 pound medium shrimp, shelled and deveined
6 tablespoons butter
1 tablespoon green onion, minced
1 tablespoon salad oil
5 cloves garlic, minced
2 teaspoons lemon juice
1/4 teaspoon salt
2 tablespoons parsley, minced
1/4 teaspoon lemon peel, grated
1 dash hot pepper sauce
Pat shrimp dry with paper towels; set aside. Melt butter in a wide frying pan over medium heat. Stir in green onion, oil, garlic, lemon juice, and salt; cook until bubbly. Add shrimp to pan and cook, stirring occasionally, until shrimp turn pink (4 to 5 minutes). Stir in parsley, lemon peel, and hot pepper seasoning. Makes 2 servings.

SCAMPI IN WINE (Shrimp scampi)
1 lb. large fresh shrimp, shelled, cleaned
1/4 lb. butter
1 lg. clove garlic, chopped
Juice of one lemon
2 tsp. parsley, finely chopped
1/3 c. white wine
Salt and pepper to taste
Melt butter, add garlic and parsley, brown lightly. Add lemon juice, wine, salt and pepper. Add shrimp and saute quickly stirring until tender, about 5 minutes. Serve wine sauce over shrimp on pasta or rice.
OR
Shrimp scampi SAUCE
6 lg. shrimp
1 1/2 tbsp. cooking (olive) oil
1/8 lb. butter
3 scallions (or lg. onion), chopped
1/2 tbsp. Worcestershire sauce
1 tbsp. white vinegar
Juice of 1/4 lemon
1/8 tbsp. white pepper
Salt to taste
Brown finely chopped scallions in oil, add butter and heat (do not burn butter). Add remaining ingredients in order listed, stirring constantly. Simmer 5 minutes. Remove from fire. Break outer shell of scampi to expose meat for easy eating. Place (scampi) in shallow baking pan, dot with butter and broil 4 to 5 from flame for 6 minutes. Remove from broiler, spoon sauce over scampi. Place in 350 degree oven for 15 minutes. Serve immediately. Keep moist while baking by placing small amount of water in pan.

Answer: The problem with using already cooked shrimp is that your sauce won't have nearly the same flavor as it would when you use raw. You can use any scampi recipe, just don't add the shrimp until the last minute or so - all you really need to do is heat them through.
Linguine with Shrimp scampi
Vegetable oil
1 tablespoon kosher salt plus 1 1/2 teaspoons
3/4 pound linguine
3 tablespoons unsalted butter
2 1/2 tablespoons good olive oil
1 1/2 tablespoons minced garlic (4 cloves)
1 pound large shrimp (about 16 shrimp), peeled and deveined
1/4 teaspoon freshly ground black pepper
1/3 cup chopped fresh parsley leaves
1/2 lemon, zest grated
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 lemon, thinly sliced in half-rounds
1/8 teaspoon hot red pepper flakes
Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.
Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine.
When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.

Split 3 pounds of deveined shrimp left in shell, leaving tail intact so that it will curl up invitingly on the plate when served. SCAMPI SAUCE:
3 shallots
1 clove garlic
1 oz. Worcestershire sauce
1/2 pt. fresh lemon juice
1/2 pt. sherry
1 lb. butter
1 1/2 c. American mustard, yellow
Grind the shallots and the clove of garlic. Add the Worcestershire sauce, lemon juice and sherry. Mix the cup of mustard with butter until smooth and add this to the first mixture. Boil for 5 minutes, with constant stirring. The lemon juice helps preserve this sauce indefinitely in the refrigerator.

4 tablespoons Sliced green onion
1 tablespoon Chopped or minced garlic
Olive oil spray
1 tablespoon Olive oil
1 pound Peeled raw shrimp, medium
1/4 cup Lemon juice
1/8 teaspoon Salt

Preparation
In wok, over medium heat, saute onion and garlic in olive oil spray 1-2 minutes, adding oil half way through. Add shrimp and stir just until pink. Add lemon juice, salt and pepper when shrimp are done, or sooner if becomes dry while cooking. Cook until juice is warm. Serve alone or with rice or pasta.

Answer: You can make it ahead of time, I have done this, but it is really quick to cook. Just make the sauce ahead of time. Generally I sautee the garlic, olive oil and lemon which takes about 5 minutes, then add the shrimp and cook for 5 minutes. I suppose that you could make the sauce ahead of time and peel and devein the shrimp. If you choose to do this I would highly suggest that you keep the shrimp on ice and cover with a damp kitchen towels or paper towels. Also, whatever starch you are serving with you can make ahead of time. But not if you are using fresh pasta. I would suggest using fresh pasta because it takes literally 4 - 5 minutes to cook and tastes a lot better. You can prepare it in the time that you cook your shrimp. Also, if you are having bread, skip the baked bread, just buy really fresh bread and serve with olive oil and balsamic vinegar. That way you don't even have to worry about turning on the oven and possibly burning the bread. Another good idea is to serve mixed greens with some a good cheese and store bought salad dressing. They do have really high quality dressings, especially where the fresh veggies are served.

I have tried to make Shrimp scampi with the wine, the butter, and the garlic but it just isnt right. What is the trick to making a good Shrimp scampi. Maybe I am missing something or am doing it wrong, whats the trick?
Answer: In your question, you did not say HOW you were making the scampi. The best to way to make scampi is the way it is made in most resturants. You need a hot skillet, fresh butter, white wine, fresh chopped parsley, minced garlic, cracked black pepper and just a squeeze of fresh lemon juice. Heat skillet with butter ...be careful not to overheat...your butter will burn. When the butter is nicely melted, add garlic and parsley then about 15 seconds later you add your shrimp. You saute (meaning...stir the pan around over the heat..ya know...like ya see Emril do...) the shrimp when the shrimp begin to turn pink add the dry white wine ...not too much. If you have a gas stove...carefully ...tilt pan to catch the alcohol in the wine on fire. This quickly burns it off without over cooking the shrimp. My guess is that perhaps you are over cooking the shrimp. Hope this helps but please dont do the "hells kitchen" flame game unless you know what you are doing or at least have a lid handy to smother the flames.

Broil until opaque throughout, 3 to 4 minutes. Sprinkle with lemon juice and parsley; toss to combine. Serve immediately; garnish with lemon wedges.
