I bought the Katie Reillys soda bread mix at work a few weeks ago and its excellent! Problem is, Im on my last bag of mix (bought 4), and I wanted to know the recipe to make more of the same exact stuff. We dont have anymore bags left at work since it was only brought in for St Patricks Day. The bag tells you the exact amount to use for the wet ingrediants, but they only list *what* is in the dry ingrediants, not how *much* of each dry ingrediant. Does anyone know?

IRISH SODA BREAD
1 lb (450g) wholemeal flour
4oz (110g) plain flour
2oz (50g) rolled oats
1 tsp baking soda
1 tsp salt
3 quarters of a pint (450ml) buttermilk
Combine the flour, oats, baking soda and salt in a large bowl. Add enough buttermilk to form a soft dough and turn out onto a lightly floured board. Knead the dough very lightly and do not overwork or bread will develop gluten and become tough.
Shape into a large round and place on a greased baking tray. Cut a deep cross in the top of the round.
Bake at 450F/230C for 8-15 minutes. reduce temperature to 400F/200C for 20-25 minutes until load sounds hollow when tapped underneath.
Eat whilst still warm!

INGREDIENTS
3 cups all-purpose flour
1 tablespoon baking powder
1/3 cup white sugar
1 teaspoon salt
1 teaspoon baking soda
1 egg, lightly beaten
2 cups buttermilk
1/4 cup butter, melted
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5 inch loaf pan.
Combine flour, baking powder, sugar, salt and baking soda. Blend egg and buttermilk together, and add all at once to the flour mixture. Mix just until moistened. Stir in butter. Pour into prepared pan.
Bake for 65 to 70 minutes, or until a toothpick inserted in the bread comes out clean. Cool on a wire rack. Wrap in foil for several hours, or overnight, for best flavor.

Answer: Sounds interesting. I'd add just a little milk to the yogurt so it's about the consistancy of buttermilk and just switch the yogurt/milk for the buttermilk measure for measure.
Baking is more exact than other forms of cooking, so youj want to make sure you're adding about the same amount of moisture.

This is the recipe for Irish Soda Bread that I use in my Irish pub.
This is a recipe handed down form my great-grand mother!
Ingredients:
4 cups all-purpose flour
4 tablespoons white sugar
1 teaspoon baking soda
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup margarine, softened
1 cup buttermilk
1 egg
1/4 cup butter, melted
1/4 cup buttermilk
Method:
Preheat oven to 375° F. Lightly grease a large baking sheet. In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine. Stir in 1 cup of buttermilk and egg.
Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round and place on prepared baking sheet. In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture. Use a sharp knife to cut a big cross into the top of the loaf.
Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the loaf comes out clean, about 30 to 50 minutes. You may continue to brush the loaf with the butter mixture while it bakes.
This recipe makes 1 (1 1/2 pound) loaf, 20 servings.(sorry I only cook in bulk)
To give a real authentic look to your creation, before baking any Irish bread recipe use a knife to cut a cross in the top of the loaf. According to old Irish folklore, the cross will ward off the Devil.

Answer: Make the dough, then roll or press it out on a flour cloth, then either cut into rounds or make 2 small ones and make the cuts like a pie in it, for small indivdual ones, bake them between 20-30 minutes at 350 F or 165 C, Gas mark 3.
The larger cut in diamond shapes about 35-40 minutes, like the tea or potato scones from Scotland. Even grill them like hot cakes/crumpets.

Ingredients:
•2 1/4 cups dairy-free plain almond milk or soy milk
•1 T. apple cider vinegar
•2 cups whole wheat flour
•2 cups unbleached white flour
•1 t. baking soda
•1/2 t. baking powder
•1 t. salt
Preparation:
1. Preheat the oven to 400F. Lightly grease a baking sheet and set aside. In a small bowl, whisk together the dairy-free almond or soy milk and the cider vinegar. Let stand for 5 minutes, or until slightly thickened.
2. In a medium-sized mixing bowl, sift together the flours, baking soda, baking powder and salt, making a well in the center. Pour in the liquid mixture and mix with your hand or a wooden spoon, working in concentric circles from the inside out until the dough comes together. (The dough should not stick to your hands but shouldn't be dry either; add flour as needed.) Turn the dough out onto a lightly floured surface and form into a round shape. Place the loaf on the prepared sheet and bake for 45-55 minutes, or until the loaf is golden brown. Let cool on a wire cooling rack.

There were caraway seeds in it, no raisins, and no buttermilk.

I would like to share with you our family's traditional
Irish Bread Recipes which has always been a staple in our
household. :
Sift together flour, baking powder, salt and soda, set
aside. Cream the margarine and sugar. Add beaten egg and
milk soured by vinegar, blend well. Add liquid mixture to dry
ingredients. Mix by hand only until dry ingredients are
moistened. Fold in currants, and caraway seeds.
Pour into greased 1 1/2 quart casserole. Brush top with
melted margarine. Sprinkle with a little sugar. Bake at
375 degrees for 30 minutes, reduce heat to 325 degrees for
30 minutes longer. Test in the middle of the loaf before
removing from oven.
(May be wrapped in aluminum foil and kept in the freezer
for up to 6 months.)

* 4 cups all-purpose flour, plus extra for currants

* 1 teaspoon baking soda

* 4 tablespoons (1/2 stick) cold unsalted butter, cut into 1/2-inch dice
* 1 3/4 cups cold buttermilk, shaken
* 1 extra-large egg, lightly beaten
* 1 teaspoon grated orange zest
* 1 cup dried currants or raisins
Directions
Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.
Combine the flour, sugar, baking soda, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix on low speed until the butter is mixed into the flour.
With a fork, lightly beat the buttermilk, egg, and orange zest together in a measuring cup. With the mixer on low speed, slowly add the buttermilk mixture to the flour mixture. Combine the currants with 1 tablespoon of flour and mix into the dough. It will be very wet.
Dump the dough onto a well-floured board and knead it a few times into a round loaf. Place the loaf on the prepared sheet pan and lightly cut an X into the top of the bread with a serrated knife. Bake for 45 to 55 minutes, or until a cake tester comes out clean. When you tap the loaf, it will have a hollow sound.
Cool on a baking rack. Serve warm or at room temperature.

What can i use in place of buttermilk and honey in a SODA BREAD RECIPE?
I am allergic to milk so is there anything else that i can use to make soda bread. Also is there anything to replace honey as i am also allergic to that as well. I was thinking of using corn surup but im not sure.

Answer: You can use soy milk and corn syrup. The baking soda needs an acid based liquid to react with to make the bread rise. Add 1 tablespoon of plain white vinegar to a cup of soy milk as an acid based substitute for buttermilk.
If you don't have soy milk, you could try using water with a tablespoon of vinegar added to each cup. French bread uses only water, flour, salt, and yeast. So water-only soda bread may work, but I haven't tried it.

Low fat Irish soda bread or scone recipe?
I want to make either Irish soda bread or scones with raisins for St. Patricks Day. I usually use pure butter and whole milk but I am now watching my fat grams and need to find a recipe that uses a lower fat margarine/butter substitute. I know that some margarines do not "translate" well if substituted for butter. Any ideas?
Answer: (most people think buttermilk is fatty when in fact it's actually better for you than regular milk)
Irish Soda Bread
2 cup flour
1 Tbsp sugar
1 1/2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/4 cup butter or margarine, softened
3/4 cup California raisins
1 1/2 tsp caraway seeds (optional)
1 cup low-fat buttermilk (2% fat)
1 egg, slightly beaten with 1 tbsp water
Sift flour, sugar, baking powder, soda and salt into a large mixing bowl. Cut in butter with a pastry blender until mixture resembles coarse meal. Stir in raisins and caraway seeds. Add buttermilk; blend to moisten the dry ingredients.
Turn dough onto floured board; knead for several minutes until smooth. Form dough into a round ball and place on greased baking sheet.
Flatten ball until dough is about 1 1/2 inches thick; brush top and sides with egg-water mixture. Cut a 1/2-inch deep cross in top of bread with sharp knife.
Bake at 375°F for 30 to 40 minutes or until toothpick inserted in center comes out clean. Transfer to wire rack to cool; brush top with butter or margarine and cover with cloth, until cool.

Low Fat Dried Fruit Scones
2 1/2 cups flour
1/2 cup packed brown sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 cup dried plum puree
2 tablespoons margarine, cold
8 ounces nonfat plain yogurt
1/2 cup dried cranberries or craisins or other dried fruit, finely chopped
1 egg white, lightly beaten
1 tablespoon sugar
-Preheat oven to 400°.
-Coat cookie sheet with non-stick spray.
-In a large bowl, combine first 6 ingredients.
-Cut into dry ingredients the plum puree and cold margarine with pastry blender until mixture resembles coarse crumbs.
-Add yogurt and mix until just blended.
-Stir in dried fruit.
-On a floured surface, roll or pat dough to 3/4 inch thickness.
-Cut out with a 2 1/2 to 3 inch biscuit cutter, rerolling scraps as needed.
-NOTE: The less you handle the dough the better so be sure to get as many as possible the first time.
-Arrange on cookie sheet, spacing 2 inches apart.
-Brush with beaten egg white and sprinkle with sugar.
-Bake in the center of the oven for about 15 minutes or until golden brown and springy to the touch.

Can someone find a SODA BREAD RECIPE that doesnt need buttermilk or sour cream?
Answer: You can make the Soda Bread w/out either.Plain milk will work if you add 1/2 teaspoon more baking soda.If your problem is that you have no buttermilk in the house you can do either of these to replace it: Measure the same amount of milk as the recipe calls for buttermilk and add 1/2 teaspoon lemon juice or vinegar.

This recipe makes one loaf.
Ingredients:
3 cups Unbleached white flour
2 teaspoons Baking powder
1 teaspoon Baking soda
1/2 teaspoon Salt
12 tablespoons cold, sweet butter
2 cups Raisins
1 Egg
1/2 cup Honey
1 cup Buttermilk
Directions:
Preheat oven to 350F.
Sift the flour, baking powder, soda and salt into a large mixing bowl. Cut the butter into small pieces and add. Cut it into the flour with a pastry blender until the mixture is the size of peas. Add the raisins and toss to distribute evenly, using two forks.
Beat the egg in another bowl until very frothy. Beat in the honey. When it is well blended, beat in the buttermilk.
Gradually pour the liquids into the flour, tossing all the while with a fork so the mixture gets evenly moistened. Continue tossing lightly with two forks until the batter comes together; it doesn't have to be completely mixed and should be very rough and lumpy.
Butter a heavy skillet or casserole, 10 to 11 inches in diameter and 2 to 3 inches deep. Round is the traditional shape. Spoon batter out into the pan and push it gently to fill the pan. It can mound up somewhat in the middle. Bake at 350 F about an hour or until the middle is set. Cut out a piece to test if necessary.
Cut into wedges and serve warm from the pan.

What is your Irish Soda bread recipe?
Answer: INGREDIENTS
4 cups all-purpose flour
3 tablespoons sugar
3 teaspoons baking powder
1 teaspoon salt
3/4 teaspoon baking soda
6 tablespoons cold butter or margarine
1 1/2 cups raisins
1 tablespoon caraway seeds
2 eggs, beaten
1 1/2 cups buttermilk
DIRECTIONS
In a large bowl, combine the first five ingredients. Cut in butter until mixture resembles coarse crumbs. Stir in the raisins and caraway seeds. Set aside 1 tablespoon beaten egg. In a bowl, combine buttermilk and remaining eggs; stir into crumb mixture just until flour is moistened (dough will be sticky). Turn onto a well-floured surface; knead about 10 times. Shape into a ball.
Place in a greased 9-in. round baking pan. Cut a 4-in. X, 1/4-in. deep, in the center of the ball. Brush the top with reserved egg. Bake at 350 degrees F for 1 hour and 20 minutes or until a toothpick inserted near the center comes out clean. Cover loosely with foil during the last 20 minutes if top browns too quickly. Cool for 10 minutes before removing from pans to a wire rack to cool completely.

1/4 cup buttermilk
1 egg

1 teaspoon caraway seed
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Combine dry ingredients in a mixing bowl. With a pastry blender, cut in butter until mixture resembles coarse meal. Stir in currants.
Mix in beaten egg. Pour in milk and mix with a fork to make a soft dough (may need a little more milk).
On a floured surface, shape dough into a ball and knead lightly 5 or 6 times. Roll out dough to 1/4 inch thick and cut into squares and triangles with a knife (approximately 2 inches in diameter).
Bake for 12 to 14 minutes or until slightly browned
