THANKSGIVING APPETIZERS?
Ive been invited to a friends house for Thanksgiving and Im in charge of desserts and appetizers. I have the desserts covered, but am having a difficult time coming up with appetizers. They need to travel easily because I have to drive about three hours to get to her home. Any ideas would be very helpful! Thank you and happy holidays!!! =)
Answer: Baba ganoush- Eggplant humus-Can be made ahead and heated there
Ingredients
•1 1/2 pounds (2 to 3 small) firm eggplant, halved lengthwise
•2 tablespoons extra-virgin olive oil
•Salt and freshly ground black pepper
•2 cloves garlic, minced
•1 lemon
•1/4 cup, a generous handful, flat-leaf parsley
•3 tablespoons tahini paste or soy sauce
•1/4 cup pine nuts, lightly toasted
•2 bags pita crisps, any flavor (recommended: Stacy's)
Directions
Turn broiler on high.
Brush cut eggplant with olive oil on flesh side, drizzle over skin side. Season the eggplant with salt and pepper. Place flesh side down on nonstick baking sheet and leave under broiler 4 to 5-inches from heat until skin is charred and flesh is very tender, 15 to 20 minutes. Cool for 5 minutes.
Scoop out eggplant flesh into food processor. Paste garlic with some salt mashing it with the side of your knife. Add garlic and the juice of 1 lemon to processor. Add parsley and tahini to processor and process until smooth. Adjust salt then transfer dip to a bowl and stir in half the pine nuts, garnish with remaining nuts. Surround the dip with pita crisps and serve

Ingredients
You will need: 4 large flour tortillas, 1 8-oz. package of cream cheese(low fat can be used), 3 tsp. of chopped green onion, 3 tsp. of chopped green pepper, 3 tsp. chopped parsley, 3 tsp. chopped black olives, 1 tbsp. of mayonnaise or sour cream, and enough thinly sliced deli meat--ham, turkey, or another kind--to cover the tortillas.
Process
Mix the cream cheese, green pepper, onion, parsley, olives, mayonnaise. Lay out the tortillas. Spread the mixture over the tortillas evenly. Lay the deli meat on top of the cream cheese mixture. Roll the tortilla up tightly. Refrigerate for one hour. Using a sharp knife, slice the tortillas into slices about 1/4 inch thick. You may serve these immediately, or you can refrigerate them for later. Serve with sour cream, salsa.

Do you know of any good non- bake appetizers for Thanksgiving?
We are having a lot of people over for Thanksgiving and as everyone usually is, we have limited oven space. We cant bake appetizers and I would like to make appetizers that are a little bit nicer than something on top of a cracker or diced cheese. Those will be included but I want nicer ones to pair with them also.
Answer: Wine and cheese is always a good appetizer, and you could serve it with crackers. You could also do spinach dip or hummus, and olives.
Besides crackers you could do asparagus or artichokes. If you substitute the crackers for fresh bread it will seem fancier. Yum.

Any ideas for THANKSGIVING APPETIZERS?
I am cooking a smaller meal this year that will likely consist of a roasted chicken, wild rice pilaf, corn on the cob, asparagus with hollandaise sauce or string bean casserole, steamed baby carrots with butter and ginger, tossed salad, and yeast rolls. The menu is not set in stone yet, but that is the current plan.
We normally do not have appetizers for Thanksgiving, but I would like to serve something to tide people over until dinner is ready this year. The only thing that really comes to mind is stuffed mushrooms. Anyone have any other good ideas for a Thanksgiving appetizer?

Answer: Fresh raw veggies and dill dip is what we normally have to tie us over until dinner. We stuff most of the celery...half butter mixed with half blue cheese, then sprinkled with paprika for color as much as flavor.

Answer: I have 4 for you...Hey, you asked ;)
~Sweet Potato Harvest Quesadillas with Cranberry Salsa~
Number of Servings: 12 wedges
Tortillas are spread with sweet potatoes, tomatoes, corn, spices and mozzarella cheese and served with a cranberry salsa, cilantro and pecans.
Ingredients:
1 Tbsp extra virgin olive oil
1 yellow onion, diced
2 cloves garlic, minced
1 red bell pepper, seeded, stemmed and julienne cut
3 Roma tomatoes, seeded and chopped
1/2 cup frozen sweet corn kernels, thawed
1 tsp ground cumin
1 tsp chili powder
1/2 tsp salt
1 (15 oz) can Cut Yams, drained and mashed
4 (9-inch) flour tortillas
1 1/2 cups smoked mozzarella cheese, grated
For Salsa:
1 cup canned whole cranberry sauce
1 Tbsp sugar
2 Tbsp orange juice
1/3 cup chopped red onion
1 cup grated carrots
1/2 cup chopped fresh cilantro
1/2 cup chopped toasted pecans
1/2 tsp salt
Directions:
1. Heat olive oil in large skillet; add onions, garlic and bell pepper, cook and stir for 3 minutes.
2. Add tomatoes, corn, cumin, chili powder and salt, cook and stir for 2 more minutes.
3. Stir in mashed yams.
4. Place a nonstick griddle over medium-high heat and add one tortilla, sprinkle tortilla with half of the grated cheese.
5. Then spoon half of the vegetable mixture on top; cover with another tortilla, pressing down lightly with wide spatula. Cook for one minute, flip and continue cooking on other side until browned and bubbly.
6. Repeat process with remaining tortillas; cut into wedges and serve with cranberry salsa (below) for dipping.
7. Meanwhile combine salsa ingredients together in non-reactive bowl, toss to combine ingredients.
8. Cover with plastic wrap and refrigerate until ready to serve.
These quesadillas are easy to make and a real treat at Thanksgiving and Christmas too!
~Beer Cheese Pretzel Dip~
Number of Servings: 12
Cream cheese, cheddar cheese and beer are combined with ranch dressing mix for a dip that's great to serve with crunchy pretzels.
Ingredients:
16oz softened cream cheese
2c finely shredded cheddar cheese
1 pkg dry ranch dressing mix
1/2c beer (+ or - depending on the consistency you desire)
seasoned salt to taste
Directions:
1. Mix all ingredients, and allow to chill.
2. Serve with small pretzels.
This is one of those recipes that when the party is over, you have a clean bowl! Also, be sure and have copies of this recipe made because everyone will want it.
Note: The longer this chills, the better (so flavors can mix). However, before serving, let it sit out for a few minutes to soften.
~Jazzy Pepitas (Pumpkin Seeds)~
Number of Servings: 4 cups
A tasty twist on roasted pumpkin seeds. Serve for Thanksgiving or for a cocktail party at any time of year.
Ingredients:
3 Tbsp butter
4 cups hulled raw pumpkin seeds (pepitas)
1/2 cup soy sauce
2 tsp Worcestershire sauce
1/4 tsp garlic salt
1/4 tsp salt
10 drops hot pepper sauce
Directions:
1. In a large fry pan, melt butter. Add pumpkin seeds, soy sauce, chili powder, Worcestershire sauce, garlic salt, salt and hot pepper sauce and mix well.
2. Cook, stirring over medium heat until seeds are thoroughly coated.
3.Spread pumpkin seeds on ungreased baking sheet.
4.Bake in preheated 325 degree F oven for 20 minutes, stirring occasionally. Watch carefully so seeds don't pop.
5. Let cool on paper towels.
6. Store in airtight containers.
~Autumn Bounty Risotto~
Number of Servings: 4
Risotto itself is a tasty addition to any meal, but with the addition of butternut squash and apples, it is perfect for autumn and all that it entails.
Ingredients:
1 butternut squash - peeled, seeds removed and cut into 1 inch pieces
1 medium Macintosh apple
6 tbsp olive oil, divided
1 large onion, peeled and quartered
1/4 cup chopped fresh sage, or 3 tsp dry sage
1/4 tsp fresh grated nutmeg
1/4 cup apple cider
*see directions for the remaining ingredients
3 tbsp olive oil
2 cloves garlic, minced
1/2 cup chopped shallots
12 ounces Arborio rice
1/2 cup white wine
32 ounces low-sodium vegetable broth, heated
1/2 cup Parmigiano Reggiano cheese - grated
1 tbsp butter
Salt and pepper to taste
Directions:
1. Preheat oven to 400 degrees.
2. On a rimmed cookie sheet, toss onion, apple and squash in 3 tbsp olive oil and bake for 40 minutes.
3. Remove from oven and gently stir in sage, nutmeg, and apple cider.
*4. While squash is baking, in a medium saucepan, heat 3 tbsp olive oil, add garlic and shallot and cook until tender, about 3 minutes.
5. Add rice and stir to coat and toast, about 5 minutes.
6. Add wine and stir until evaporated.
7. Add broth 1 cup at a time, until absorbed after each addition, about 18-22 minutes total, stirring frequently.
8. Remove from heat, and add butter, Parmigiano Reggiano, salt and pepper.
9. Place risotto on platter topped with roasted vegetables.
10. Serve Immediately.
All of these are so fabulously delicious!

Answer: My family always has sweet and sour meatballs. I use prepared mini meatballs, (Trader Joe's brand party size are the best), and I cook them in one can of whole berry cranberry sauce mixed with one bottle of chili sauce which is found near the ketchup in the grocery store. It's quick, easy and delicious, and just the right bite before a big meal like Thanksgiving. Use one can of cranberries and one bottle of chili sauce per bag of meatballs, and with 12 guests, I would double the recipe. Combine all ingredients and cook over medium until the meatballs and sauce are hot. Serve with toothpicks for easy snacking. Good luck and Happy Holidays!

What are some good appetizers for Thanksgiving?
Every year we have the same foods for Thanksgiving: a turkey, mash potatoes, stuffing, cheese shells, dinner rolls,corn and pea mixture, pumpkin and creme pie, and canned yams. i just wanted to try something different, any good substitutions.
Answer: one of my friends made these for me n they were amazing! don't know where they'd really fit in the meal, but im sure somewhere.. like maybe appetizers or something...
any way i dont know what to call it so ill just describe:
grill (or fry on stove) boneless/skinless chicken breasts, cube into 1 in pieces or so, fry some bacon like half way n sprinkle brown sugar on the bacon when its frying... then roll pc of bacon around cube of chicken u can put them on kabob sticks to hold them together then sprinkle some more brown sugar n bake them for a few min.... SOOO good!! i made them myself after n they were so quick n easy!
~ the more brown sugar in my opinion, the better! :D

So is there anything that would be easy for me to make, or even buy frozen from a supermarket that would be good as a thanksgiving appetizer, or finger food?
Answer: Simple, tasty dip:
1 rectangle of cream cheese, softened to room temperature
1 jar of salsa, either mild or medium
1 bag of tortilla chips or corn chips
Place unwrapped cream cheese in a soup bowl. Pour salsa over cream cheese, serve with chips!

Really unique appetizers for Thanksgiving?
Just looking for something other than the normal Thanksgiving appetizers since Im in charge of them...any ideas?
Answer: I like to use ingredients that are available in the fall... pumpkin, nuts, cranberries, dates. Here are a few of my recipes.
Spiced Mixed Nuts
(Makes 3 cups)
Ingredients:
2 tbsp. butter
1 c. pecan halves
1 c. whole almonds
1 c. dry-roasted unsalted peanuts
1 tbsp. worcestershire sauce
1 tsp. chili powder
1/2 tsp. garlic salt
1/4 tsp. cayenne pepper
Preparation:
Oven 300°. Melt the butter in a 13x9x2 inch baking pan.
Add nuts and worcestershire sauce. Mix well.
Bake until nuts are toasted, stirring occasionally, about 30 minutes.
Remove from the oven and sprinkle the mixture evenly with spices.
Toss and serve warm or cooled.
(These also make a lovely hostess gift for all those holiday parties!)
Pumpkin Cream Cheese Spread
Makes 1 1/2 cups
Ingredients:
8 ounces cream cheese, softened
1/2 cup canned pumpkin
1/4 cup granulated sugar
3/4 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
Beat all ingredients in a medium mixing bowl with an electric mixer on medium speed until smooth. Cover and refrigerate for at least 1 hour or up to 24 hours.
Cranberry Cheese Spread
Makes 24 servings
Ingredients:
1 (16-ounce) can whole-berry cranberry sauce
1 (4-ounce) can Diced Green Chile's
2 tablespoons sliced green onion
1 tablespoon fresh lime juice
1/2 teaspoon garlic salt
1/2 teaspoon cayenne pepper
1/2 teaspoon chili powder
1 (8-ounce) package reduced-fat cream cheese
1 package crackers, for serving
In medium bowl, combine cranberry sauce, Chile's, green onion, lime juice, garlic salt, cayenne pepper and chili powder; mix until well blended.
To serve, place cream cheese on serving dish. Spoon 1 cup of the cranberry mixture over cheese. Serve with crackers.
Stuffed Dates
Makes 4 dozen
Ingredients:
2 dozen pitted dates, cut in half
A variety of interesting cheeses (Saga blue, brie, pepper jack, smoked gouda, herbed goat cheese)
16 strips of bacon (1-1 lb. package should be enough)
Directions:
Cut each bacon strip into 3 pieces. Par cook the bacon until some of the fat is rendered out, but it is still soft and pliable. Stuff each date half with some different cheeses and wrap a piece of bacon around it. Secure with toothpick. Broil the stuffed dates until bacon is crisp. Serve warm or at room temperature.

Answer: You could make mini turkey turnovers (like pot pie, but enclosed and small). I would probably use canned biscuits for the turnovers. Make the dressing into little balls like hush-puppies (baked) and make pumpkin pies in a mini muffin pan, (for the crust you can use the refrigerator crust and just cut little circles).

Going to a party, I need to bring appetizers... 20-30 people will be there and that does include kids ranging in different ages. Its the saturday after thanksgiving, I have to work friday so easy easy prep would be great.
I do plan a veggie platter and a fruit platter. I should have stated that. I am looking for something semi-fancy... I am good at improvising and a whiz in the kitchen. Its just not having the day off in between the holidays is freaking me out.

Answer: PARTY CREAM CHEESE PINWHEELS
10 large flour tortillas
2 boxes of cream cheese
1 cup pitted black olives, finely chopped
2 tablespoons pimentos, finely chopped
1 pkg ranch dressing
2 tablespoons green jalapenos, finely chopped
Soften cream cheese Mix in the powdered Ranch dressing Add the pimentos, black olives and the jalapenos.
Spread evenly over the flour tortillas using a rubber spatula. Roll tightly. Cover and chill for about one hour. Slice into pinwheels.

I have some ideas, am not sure they are appropriate. This year Im having company they will spend most of the day with us. Also what kind of drinks should there be?
My guests will be here for a while and I dont want them starving until the food gets served. As for drinks I was thinking mixed and beer. The kids know theres always something for them to drink.

Answer: I tended to go a bit lighter on the appetizers because I have such a huge feast followed by some very serious desserts. So, I just put out a few plates of crackers and cheese, some olives, some tapanade with bread dip.
Tradition in my family is to drink the new Beaujolais Nouveau that always comes out the 3rd week in November. I also have champagne and white wine on hand. I would also have some cold beer, seltzer and regular and diet soda.
