Answer: Foolproof Prime Rib
1 Allow roast to stand at room temperature for at least 1 hour.
2 Preheat the oven to 475°F.
3 Season roast... place roast on a rack in the pan with the rib side
down and the fatty side up.
4 Roast for 1 hour. Turn off oven. Leave roast in oven but do not open oven door for 2-3 hours.
5 About 30 to 40 minutes before serving time, turn oven to 375°F and reheat the roast.
6 Cover with foil and let stand for 15 minutes before cutting.
Important: Do not remove roast or re-open the oven door from time roast is put in until ready to serve.

Anyone have a fool-proof PRIME RIB RECIPE to share?
Answer: YES! ..................... I make this exact recipe EVERY Christmas and it has been PERFECT every time. (It is a Food Network recipe). This recipe is fail proof. I have passed it on to three friends who made perfect prime ribs too!
Major points:
1... Follow the directions to bring to room temp
2... Don't open the oven unless you are really sure it is almost ready
3... Follow the directions to a tee and use a LOT of pepper (I use salt, pepper and garlic on mine).
5-rib prime rib roast
Salt and pepper
Bring prime ribs to cool room temperature (about 1 1/2 hours out of the refrigerator). Make sure you know the weight of the roast.
Preheat oven to 275 degrees.
Season roast extremely well with salt and pepper. Place in roasting pan, fatty side up, and place in oven. Cook until desired degree of doneness is reached (resist the temptation to open the oven door a lot). For rare meat, the roast should take about 20 minutes per pound. When you're within half an hour of your estimated finish time, remove the roast from the oven, and plunge a quick-read thermometer into a fleshy part of the meat near the center (don't do anywhere near a bone). We like to stop cooking the roast in the oven at 115 degrees; this is extremely rare, but the roast will continue to cook as it stands outside the oven (the temperature should go up 5 to 10 degrees). If you remove it at 120 degrees it will be rare, and at 125 degrees it will be medium-rare; we wouldn't recommend going much higher than that.
Place the roast on a cutting board, uncovered, and let it rest for 15 minutes.
When ready to serve, simply cut the meat away from the bone in one enormous chunk. Then, cut the "filet" of meat into slices and serve immediately. Cut through the bones (you'll have 5), and serve them separately

Answer: here's how i do mine right from my cook book!
Cooking Prime Rib in Rock Salt
The key is keeping the meat and everything else DRY This is very, very important. I let the roasts set out for about 2 hours before starting the cooking process. This makes a more tender piece of meat when it is cooked. I rub the prime rib roasts with my favorite mixture of seasonings and set the roasts aside. In the mean time I start 3 Weber charcoal chimneys full of charcoal. Next, I place 1" of rock salt into the bottom of my 22 Maca. Then I put 2 roasts onto the rock salt in the bottom of the oven. I pour in more rock salt to cover the 2 roasts about 1/2". Then I place the next 2 roasts on top of the first 2 and fill the oven with more rock salt and cover with more rock salt. It takes about 50 to 60 pounds of rock salt and I use water softener salt because its $12.00 per 80 pounds, compared to 1.59 per 5 pound box of ice cream salt. NOTE there is no difference! Cover the Dutch oven and I place 1 chimney of briquettes in a ring around the bottom and 1 1/2 on the lid. 3 hours later I have 95 pounds of delicious prime rib ready to be devoured!
Here is why the meat does not get salty. MOISTURE. Plain and simple. You need moisture to get the saltiness into the meat, that’s why the rub flavors get into the meat and not the rest of the salt. I've heard many cooks who spray water over the salt to "harden it" what that moisture does is allow the salt to penetrate the meat and makes it more salty. When you pack the roasts into a dry oven, the rock salt acts much like cast iron and transfers the heat directly to the meat in a even fashon all around the meat, leaving no hot or cool spots. The rock salt also makes a great moisture bearier, keeping the juices inside the meat. That's how it works in a nutshell.
Dave’s Slow roasted Prime Rib
3 whole 7 bone prime rib roasts (15 to 22 lbs.)
1 cup black pepper
1 cup granulated garlic
½ cup granulated onion powder
2 cups kosher salt
2 40 lb. bags water softener rock salt crystals (do not use granules)
In a medium bowl, combine pepper, garlic, onion and kosher salt. Stir well. Rib spice mixture all over all sides of each roast, set aside on a sheet pan. Pour a 1” layer of rock salt in the bottom of a 22” Maca Dutch oven. Place one roast to one side but not touching the cast iron. Pour in enough rock salt to cover the roast half way, then layer rock salt around the roast. Place the second roast in the void of rock salt and fill in the gap between roasts with a ½” layer of rock salt. Pour in enough rock salt to fill the second roast ½ way. Place the third roast over the first roast and pour in rock salt for a ½” layer between the first 2 roasts. Fill the remaining space with rock salt, covering all of the meat. Place the lid on the oven put 2 rings of briquettes under the oven and 2 ½ rings on the lid. Bake the roasts for 3 ½ hours maintaining the coals as needed.
Serves 45 to 70 1 lb. servings
90 to 150 8 oz. servings
Now just break down the recipe for one roast and use a 14" diameter Dutch oven or oval roaster. In your oven bake it at 300 degrees for 3 hours.

Ingredients
1 whole boneless prime rib (12 to 15 pounds)
2 cups Creole spice blend
Instructions
Begin by cleaning the whole prime rib thoroughly. Pat dry, then rub well on all sides with the creole blend.
Allow the meat to sit for at least 1 hour.
Place the prime rib on an electric rotisserie on medium heat. Cook to an internal temperature of 135 degrees F, then remove.
Allow the meat to rest for at least 30 minutes before cutting.
Or a better one is:
Rotisserie Prime Rib Roast
Marinade
2 cups red wine
1 cup red wine vinegar
1/3 cup olive oil
5 tsp. dried rosemary
7 cloves garlic, crushed
3 tsp. dried thyme
3 bay leafs
2 tsp. fresh green peppercorns
2 tsp. pepper
3 lbs. prime standing rib roast
Meat thermometer
Black Rub
1 1/2 Tbsp. coarse-ground black pepper
1/2 Tbsp. kosher salt
6 cups apple wood chips
6 cups cherry wood chips
The night before you barbecue combine marinade ingredients and mix well. Place roast in a sealable plastic bag, pour marinade over it and refrigerate over night.
Remove marinade and place in a drip pan. Place the drip pan in the barbecue over a burner to one side of the grill. Leave this side off. Turn the far burner, not under the drip pan, to high. Leave the roast resting a room temperature for 30 minutes.
Place 2 cups of apple wood chips in water to soak for 30 minutes. Do the same with 2 cups of cherry wood chips.
Rub the roast with the coarse ground peppercorns. Put the roast on the rotisserie spit and secure into place.
Make two smoke packages - one with apple wood chips and the other with cherry wood chips. Each package should contain a mixture of 1 cup of soaked chips with the excess water squeezed out and 2 cups of dry wood chips. Using a fork poke holes on both sides of each package. Place the packages directly over the heat source.
Just prior to putting roast in place, season with salt. Place rotisserie onto grill and leave to roast for 2- 2 1/2 hours or until the internal temperature is 140°F.After 1 hour replace the smoke packages with freshly made sacks.
Remove the finished roast from grill and let stand for 10 minutes before carving.
Serve and enjoy!

I was thinking of making prime rib for christmas dinner to feed about 9 people. Heres my problem... Im totally lost! How big of a piece should I buy, and also, Ive been looking at some recipes online and the center is always pink... is there anyway to fully cook the rib without ruining it so that the middle is not pink? Any suggestions, tips and recipes would be great... help me out please!
Answer: The glory of preparing a prime rib roast is that you can have well done at both ends moving towards medium well, medium, medium rare and medium at the very middle, thus pleasing a variety of dinner companions. If this is not going to meet your needs, you could order a precooked and carved prime rib from a local catering company (many supermarkets will prepare one); pick it up the day before dinner with reheating instructions.
For a roast of beef that is more evenly done all the way through, I would recommend a rib eye roast or a sirloin roast, although the sirloin tends to be a little more dry and will need more attention during the roasting process.
Good luck ... I don't eat very much red meat for a variety of reasons, but a truly "prime" prime rib roast is a royal treat for most non-vegans in your circle of family and friends.

Answer: Easy:
-If not done so, separate the bones from the meat and the re-attach using string.
-Preheat oven to 425 degrees(F)
-Cover roast with sea salt and fresh cracked black pepper.
-Cook to desired doneness (pull slightly before done and let stand 10 minutes before carving to allow juices to redistribute- roast will continue to cook even though pulled from oven). 125-130 is med-rare, 135- med, 140 med well, 150...yummo, beef jerky it is then. For medium rare I'll pull at 120-125 and it'll finish around 130.
Honestly, a well-trained muppet could do this.

Answer: Yes, definitely AND tuck slivers of garlic into the fat part and sprinkle the mustard coating with dried oregano, marjoram, thyme and salt and pepper, then put the roast on a bed of coarsely chopped onion, celery and carrots and this will make a great starter for your gravy once the meat is out and resting after it has roasted. Have a good recipe for prime rib (rib roast))?
I have tried twice to make prime rib. The first time it was undercooked and burnt outside tough and rare in the middle. The second time I purchased a cut from a quality butcher (choice cut) and baked it as most recipes say in a low oven for hours with a rub. Both times they didnt turn out very good. .....Tell me why and give me suggestions. THANKS!
Answer: 1 (about 14 to 16 pound) beef rib, roast ready
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
12 cloves of peeled garlic
6 sprigs of fresh thyme
1 large onion, sliced 1/4-inch thick
Salt and freshly cracked black pepper
Preheat the oven to 350 degrees F. Using a sharp knife, make a slit 3/4 of the way up the fat cap. Pull the fat cap back and season the entire roast with all spices from paprika to garlic powder. Place the garlic, thyme and onion slices in-between the meat and fat cap. Lay the fat cap back over the vegetables and meat. Using butchers twine, secure the fat cap to the meat by tying the two together at six different intervals (wrap the twine from the rib end to the loin end). Cover the exposed fat cap with cracked black pepper. Place the roast, rib side down, on a wire rack. Place the wire rack in the oven on the center rack. Place a drip pan on the bottom rack of the oven. This will catch all of the drippings from the roast. Roast for 1 1/2 to 2 hours for medium rare. Remove the roast from the oven and allow to rest for 10 to 15 minutes before slicing. Using knife, cut away the butchers twine. Carve the roast into individual servings. Reserve the drippings for later use.
Combine all ingredients thoroughly and store in an airtight jar or container.
Yield: about 2/3 cup

Answer: I will have to agree with JC. If you cook your prime rib well done you just turned your money into shoe leather. You can buy brisket cheaper and still put a rub on it. Cook over a long period of time and it will be plastic fork tender. It's also a flavor cut of meat because of all the fat. If you want a recipe for brisket just ask, or you can just look one up.

Need recipe for prime rib drippings?
I made a 10lb prime rib last night and have all these beautiful drippings leftover, does anyone have a recipe that would use them?
Answer: The drippings would make a great sauce or gravey base! Deglaze your pan with some great red wine, add butter and thyme and simmer to thicken. Season with salt and pepper as needed. If you've removed the drippings from the pan and put them in the fridge, let them come to room temperature and follow the above with the wine and butter and thyme. You can freeze the liquid in ice cube trays to add to other sauces or soups later.

Answer: 30 large garlic cloves, unpeeled
1/4 cup olive oil
1/3 cup prepared white cream-style horseradish
1/2 teaspoon coarse salt
1 6-pound well-trimmed boneless beef rib roast
Beet, Red Onion and Horseradish Relish
Preheat oven to 350°F. Toss garlic cloves and olive oil in small baking dish; cover. Bake until garlic begins to brown, about 35 minutes. Drain olive oil into processor. Cool 15 minutes. Peel garlic; place in processor. Add prepared horseradish and coarse salt. Puree until almost smooth.
Place rak on large rimmed baking sheet. Sprinkle beef with salt and pepper. Spread thin layer of garlic mixture on underside of beef. Place beef, garlic mixture side down, onto rack. Spread beef with remaining garlic mixture. Cover and refrigerate at least 3 hours or up to 1 day.
Position rack in bottom third of oven; preheat to 350°F. Uncover beef. Roast until thermometer inserted into top center registers 125°F for rare, about 1 hour 45 minutes. Transfer beef to platter; let stand 30 minutes. Scrape pan juices into small saucepan.
Slice beef crosswise. Rewarm juices; drizzle over beef. Serve with beet relish.

I need a PRIME RIB RECIPE?
I have a 3 lb. prime rib roast with the bone cut out and kept for flavor. I would like to get a good recipe for it, but I prefer not to use wine in it. Any suggestion?

INGREDIENTS
One standing rib roast, 3 to 7 ribs (estimate serving 2 people per rib), bones cut away from the roast and tied back to the roast with kitchen string (ask your butcher to prepare the roast this way)
Salt and freshly ground black pepper.
METHOD
1) Remove roast from the refrigerator, loosely wrapped, 3 hours before cooking. Roasts should always be brought close to room temperature first, before they go in the oven.
Cookbooks often call for the excess fat to be removed. By "excess" fat they mean any fat more than an inch thick. The fat is what provides the flavor and what you are paying for with prime rib, so you want to leave it on. Your butcher should have removed any excess fat.
If your butcher hasn't already done so, cut the bones away from the roast and tie them back on to the roast with kitchen string. This will make it much easier to carve the roast, while still allowing you to stand the roast on the rib bones while cooking.
2) Preheat your oven to 500°F, or the highest it will go (our oven only goes up to 450°F). Generously sprinkle salt and pepper all over the roast.
3) Insert a meat thermometer into the thickest part of the roast, making sure it doesn't touch a bone. (Some meat thermometers require that you poke a hole first with a skewer, and then insert the thermometer.) Place the roast, fat side up, rib side down in a roasting pan in the oven.
4) After 15 minutes on 500°F, reduce the heat to 325°F. To figure out the total cooking time, allow about 13-15 minutes per pound for rare and 17-20 minutes per pound for medium rare. The actual cooking time will depend on the shape of the roast and your particular oven. A flatter roast will cook more quickly than a thicker one. So make sure to use a meat thermometer. This is not a roast to "wing it". Error on the rare side.
Roast in oven until thermometer registers 120°F. for rare or 135°F. for medium.
Check the temperature of the roast using a meat thermometer a half hour before you expect the roast to be done. For example, with a 10 pound roast, you would expect 2 1/2 hours of total cooking time (15 minutes at 500° and 2 1/4 hours at 325°). In this case, check after 2 hours of total cooking time, or 1 hour 45 minutes after you lowered the oven temp to 325°.
Once the roast has reached the desired internal temperature, remove it from oven and let rest 20 minutes, covered with aluminum foil, before carving. The roast will continue to cook while it is resting.
5) With a knife or scissors, cut the strings which attach the meat to the bones. Remove the bones (save for making stock for soup. Then, using a sharp carving knife, slice meat across the grain for serving, making the slices about 1/4-1/2 inch thick.
Making gravy
To make the gravy, remove the roast from the pan. Place pan on stove on medium high heat. Pour off all but 2 tablespoons of the drippings to a separate container. Into the 2 tablespoons of drippings in the pan stir in 1 to 2 tablespoons of flour. Stir with a wire whisk until the flour has thickened and the gravy is smooth. Continue to cook slowly and stir constantly. Slowly add back the previously removed drippings (remove some of the fat beforehand if there is a lot of fat).
In addition add either water, milk, stock, cream or beer to the gravy, enough to make 1 cup. Season the gravy with salt and pepper and herbs.

Mix chopped fresh rosemary with salt and garlic. Rub all over the roast and cook. It's the best. Someone last year on YA asked me for that recipe so she could use it.
If you have a meat thermometer, cook until desired temp. Normally have oven preheated at 350 degrees.
