Answer: Lobster Bisque Preparation Time: 1 hourServings: 6 3 1 1/2 pound live female lobsters 2 carrots,peeled and small dice 3 stalks celery, small dice 4 medium shallots, small dice 2 cloves garlic, peeled and minced 3/4 cup vegetable oil 6 tbsp butter 4 tbsp flour 1 tbsp chopped fresh tarragon 4 tbsp cognac 1 cup heavy cream 1 cup white wine 2 1/2 quarts fish stock (if fish stock is not available, use half strength chicken stock. If you use canned, be careful when salting, as canned stocks are often salty.) 1 6 oz can tomato paste Bouquet Garni with 2 sprigs fresh tarragon added pnch of cayenne cracked black pepper salt Cut the lobster down the center of the head between the eyes. (how to kill a live lobster) Leave the tail whole. Separate the tail, the head, and remove the claws. Keep any juices, the tomalley and the roe in a bowl and refrigerate. Heat a 12 inch saute pan on high heat and add the oil. Sear the cut pieces of lobster cut side down, and add the tail and claws whole. Cook until the shells are bright red and the flesh is almost cooked, about 8 minutes. Remove lobster from the pan and set to the side. Add 2 tbsp butter to the pan and saute the shallots, carrot, celery and garlic until lightly browned. Add tomato paste and saute for 2 minutes. Add white wine, cook for 3 minutes, whisking to evenly disperse the tomato. Add fish stock. Add bouquet garni and lobster to the pot and bring to a boil, skimming any froth or fat with a 4 oz ladle. Season with salt, pepper and cayenne, and simmer for 15 minutes. Remove lobster and set aside, remove boquet garni and discard. Melt remaining 4 tbsp of butter in a small saucepan, add flour and whisk to make the roux. Add reserved lobster juices, tomalley, roe and chopped tarragon, and whisk until smooth. Add the cognac to the roux, and then 1/3 at a time, add the roux to the bisque, whisking to remove any lumps before each addition. Simmer for 15 minutes. Strain through a china cap, using a ladle or rubber spatula to force as much as possible through. Add cream and season with salt and pepper. Remove meat from lobster and cut into bite size chunks. Serve with lobster meat, a dollop of creme fraiche and a sprig of fresh tarragon.

houlihans /Red LOBSTER RECIPES?

Does anyone have the recipe for Houlihans Stuffed deep fried mushrooms & the dipping sauce? Also, what about Reb Lobsters chedder biscuits?
Answer: You just need to put some cheddar cheese in regular drop biscuits, and brush garlic butter over them when they are done. Bisquick does have a mix in a bag I tell people to try, it's called garlic cheese biscuits I think. I never have tried them..I work at RL, so I see enough of the biscuits. At RL they have a dry mix that comes, they add water cheese and bake. It is also a dry mix for the garlic that they bush over the top, which they just mix with a butter sauce and the dry mix. One big difference you will have between theirs and yours is the way you cook them. Ovens at home won't cook like the ones we use. Just some things to think about when you're eating them...each one of the Cheddar Bay Biscuits there is 170 calories and 9 grams of fat.....

Answer: Boiling is one of the simplest ways to cook a lobster, and is probably best for the squeamish that don't wish to cut up a live lobster with a knife. Some say that you can 'hypnotize' a lobster by rubbing the top of its head or its abdomen, thereby pacifying it before boiling. The theory is that the adrenaline produced by a frightened lobster adversely affects the texture and flavor of the meat. I have never seen or tasted any evidence of this, but if you want to cover all possible bases, go ahead and hypnotize your lobster. It is important to select a pot big enough to hold enough water to cover the lobsters completely. Bring the water to a rolling boil and add 1 tablespoon salt per quart of water. Put the lobsters in claws first and begin timing from the moment the water comes back to a boil. To steam lobsters, cook them, covered, in a steamer basket above boiling water. They will need 1 to 2 minutes less, as the steam is hotter than boiling water. For 1 pound: 5 minutes 1 1/8 pounds: 6 minutes 1 1/4 pounds: 8 minutes 1 1/2 to 2 pounds: 8 to 10 minutes more than 2 pounds : 12 minutes Grilled or Baked Lobster Turn the lobster the other way and cut the tail in the same fashion as killing the lobster. Along the center of the lobster are three kinds of viscera, the dark green are the stomach and intestine that should be scraped out and discarded, and the yellow-green and coral are the liver, or tomalley, and the roe, which are both delicious and can be left in. Remove the claws, and crack them with the back side (not the sharp side) of the knife. I prefer to do this inside a plastic bag to minimize the mess. To grill the lobster Place the claws still encased in the cracked shell on the hotter part of the grates. Salt and pepper the inside open half of the lobster and grill it 2-3 minutes turn over the body and the claws and grill for another 4 minutes. If the flame flares up, move the lobster to a cooler part of the grill, or move it until the flame calms down. To bake or broil a lobster Prepare in the same manner as above and, for broiling, place the lobster at least eight inches from the flame in a shallow fry or saute pan and begin with the cut side down for 3-4 minutes. When the shell has turned bright red, turn and reapply butter and finish for another 3 minutes. Be sure to check for doneness, as broiler temperatures vary. Use the same method in the oven at 425 degrees. White Lobster Chili: 2 tbsp olive oil 2 small "chicken" lobsters 1 onion 4 stalks celery 1 carrot 1 bay leaf 2 cups great nothern beans 2 tablespoons chili powder 2 cloves garlic 1 tsp ground toasted cumin 1/2 cup heavy cream 1 tablespoon chopped fresh cilantro salt cracked pepper Dice half the onion, celery and carrot into large pieces, place in a 6 quart or larger saucepan or stock pot with the bay leaf, peppercorns and 3 quarts of water and bring to a boil. Put lobster into pot and boil for 15 minutes, remove the lobsters, strain the broth and set aside. Fine dice remaining onion, celery and carrot. Heat the pan and olive oil over medium heat and saute the onion, celery and carrot until translucent, add garlic and saute a bit more. Add water, chili powder, cumin and white beans and cook until beans are done, about 45 minutes. Remove lobster from shell, rough chop and add to soup. Finish with cream and cilantro and season with salt and pepper.

How do u make the bread bowls from red lobster? Other bread recipes are welcome...?

I saw a commercial and it was advertising their soups and they were pouring it in a bowl made of bread! Ive never made bread before only biscuits and things like that. please share your recipe for bread and a trick for the bowl! Also, I welcome any other bread recipes like jalapeno, bacon and cheese, and other unique breads!
Answer: Italian Bread Bowls -- PLEASE buy a thermometer for baking breads!! If not you risk the chance of killing your yeast (from experience) INGREDIENTS 2 (.25 ounce) packages active dry yeast 2 1/2 cups warm water (110 degrees F/45 degrees C) 2 teaspoons salt 2 tablespoons vegetable oil 7 cups all-purpose flour 1 tablespoon cornmeal 1 egg white 1 tablespoon water DIRECTIONS In a large bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes. Add salt, oil and 4 cups flour to the yeast mixture; beat well. Stir in the remaining flour, 1/2 cup at a time, beating well with an electric mixer at medium speed after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 6 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 40 minutes. Punch dough down, and divide into 8 equal portions. Shape each portion into a 4 inch round loaf. Place loaves on lightly greased baking sheets sprinkled with cornmeal. Cover and let rise in a warm place, free from drafts, until doubled in bulk, about 35 minutes. Preheat oven to 400 degrees F (200 degrees C). In a small bowl, beat together egg white and 1 tablespoon water; lightly brush the loaves with half of this egg wash. Bake in preheated oven for 15 minutes. Brush with remaining egg mixture, and bake 10 to 15 more minutes or until golden. Cool on wire racks. To make bowls: Cut a 1/2 inch thick slice from top of each loaf; scoop out centers, leaving 3/4-inch-thick shells. Fill bread bowls with hot soup and serve immediately. ^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^ Honey Granola Bread -- INGREDIENTS 3 1/2 cups all-purpose flour 2 (.25 ounce) packages active dry yeast 1 teaspoon salt 1 3/4 cups fat-free milk 10 tablespoons honey 1/3 cup butter or stick margarine 2 eggs 2 cups whole wheat flour 1 cup reduced-fat granola cereal without raisins 1 cup rye flour 1/2 cup cornmeal 1/2 cup quick-cooking oats 1/4 cup slivered almonds, toasted and chopped DIRECTIONS In a large mixing bowl, combine 2 cups all-purpose flour, yeast and salt. In a saucepan, heat the milk, honey and butter to 120 degrees F-130 degrees F. Add to dry ingredients; beat just until moistened. Add eggs; beat until smooth. Stir in whole wheat flour and enough remaining all-purpose flour to form a soft dough (dough will be sticky). Stir in the granola, rye flour, cornmeal, oats and almonds. Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Turn onto a floured surface. Divide in half; cover and let rest for 10 minutes. Shape each portion into a ball. Place on a greased baking sheet; flatten into 5-in. circles. Cover and let rise in a warm place until doubled, about 30 minutes. Bake at 375 degrees F for 20 minutes; cover with oil. Bake 10 minutes longer or until bread sounds hollow when tapped. Remove to a wire racks. ^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^ Pull-Apart Bacon Bread -- INGREDIENTS 12 slices bacon, diced 1 (1 pound) loaf frozen bread dough, thawed 2 tablespoons olive oil, divided 1 cup shredded part-skim mozzarella cheese 1 (1 ounce) package ranch salad dressing mix DIRECTIONS In a skillet, cook bacon over medium heat for 5 minutes or until partially cooked; drain on paper towels. Roll out dough to 1/2-in. thickness; brush with 1 tablespoon of oil. Cut into 1-in. pieces; place in a large bowl. Add the bacon, cheese, dressing mix and remaining oil; toss to coat. Arrange pieces in a 9-in. x 5-in. oval on a greased baking sheet, layering as needed. Cover and let rise in a warm place for 30 minutes or until doubled. Bake at 350 degrees F for 15 minutes. Drop the lobster in head first, return to a boil, cover, and cook for 5 minutes for the first pound and 3 minutes for each additional pound. If you really want to serve it another way, lobster Newburg is very nice. 1 1/2 cups heavy cream 3 well-beaten egg yolks Salt & freshly ground pepper 3 cups cooked lobster meat 1 tablespoon butter 1 tablespoon sherry Heat the cream gently. Remove from heat and stir in the egg yolks, salt, and pepper. Return to low heat and stir until thickened. Add the lobster and continue to cook until heated through. Add the butter and sherry and continue to cook for 1 minute. serve with rice.

Answer: just boil the lobster. heat you water to a roiling boil and drop the bugger in. and wait to drop another until it starts to boil again. they are done when they turn reb wont take to long. for a side dish i would just do garlic mashed potatoes or augratin potatoes and boxes are fine for those. and maybe something green like asperagus(sp) you can jsut boil this to and maybe serve with a cheese sauce. and maybe a salad. for the lobster i would use clarified butter clarified butter slow heat a stick of butter till it seperates strain through two layers of cheesecloth place in a ramikin or small container can be stored for up to 4 weeks in a air tight container in the fridge. hope that helps

Answer: Lobster:- Grilled 4l Water 2t Salt 2 each 1 to 1¼ lb. Lobsters 6T Butter, unsalted 4T Lemon juice 8 Sprigs chopped parsley 1t Old Bay Seasoning 1 Lemon, quartered lengthwise In an 8 to 10-quart stock pot over high heat, bring salted water to a rolling boil. Blanch the Lobsters for 3 minutes. Remove and chill in a large bowl filled with ice and water. When the Lobsters have cooled enough, put them on their backs on a cutting board. With a large sharp kitchen knife, cut each Lobster lengthwise into two separate halves, completely through the shell. Remove the guts from the tails. Rinse halves under cold water to remove the soft green gooey stuff. Crack each claw and remove the meat. Cut the claw meat into bite-size portions and place it in the split body cavity. For the butter: In a small saucepan, melt the butter slowly over low heat. Add the lemon juice, parsley & seasoning. Stir to blend thoroughly and brush mixture onto the meat of both Lobster halves. With the grill set on “high,” cook the lobster halves until the meat is opaque and nicely grilled for about 5 minutes. Serve immediately with fresh lemon wedges and remaining butter for dipping.

Answer: Lobster, Shrimp and Andouille Sausage over Pasta 1 pound baby shells pasta 3 tablespoons extra-virgin olive oil 1/2 pound mushrooms, thickly sliced 1 whole white onion, sliced 1 tablespoon minced fresh garlic 1 tablespoon dried herbes de Provence Sea salt 8 ounces cooked lobster meat 8 medium shrimp, peeled and deveined 1 pound andouille sausage, cut into pieces 1 tablespoon white wine 4 medium fresh tomatoes, quartered 1 cup chopped fresh basil leaves 1/2 cup heavy cream Directions Cook the pasta in a large pot of boiling, salted water according to package directions until it is al dente. While the pasta is cooking, heat the oil in a large skillet over medium heat. Add the mushrooms, onion, garlic, herbes de Provence, salt, to taste, and cook until softened, about 3 to 4 minutes. Add the lobster, shrimp, and sausage, reduce the heat to low, and cook until the shrimp turn pink, about 2 to 3 minutes. Add the white wine and tomatoes and cook over medium-high heat for 3 minutes. Add the basil and cream and cook on high heat for 3 to 4 minutes. Stir in the pasta, taste and adjust seasoning. Serve in large pasta bowls.

I want to make a special dinner for my boyfriend next week. I figured Id make lobster tails, with some sort of side, appetizer, and dessert. Any good ideas for a meal? He HATES rice and Im not a huge fan of potatoes, so that leaves very few options. Also, how can I cook the lobster and give it some flavor? Answer: Try these: Lobster Tails Thermidor 4 (6 to 8-ounce) packaged lobster tails, shell jumbo shrimp or prawns can be substituted 4 tablespoons butter, divided 1 small white onion, finely chopped 2 tablespoons all-purpose flour Splash dry white wine or dry sherry 1/2 cup milk, eyeball it 1/3 cup grated white cheddar 1/2 teaspoon paprika or crab boil seasoning, recommended: Old Bay 2 tablespoons Parmesan 2 tablespoons bread crumbs Handful parsley leaves mixed with 2 cups baby greens, for plate garnish Lemon wedges, for garnish Bring a pot of water to a boil, 3 or 4 inches deep. Add lobster tails to the water and boil 7 to 8 minutes. Drain and shock under cold water to cool. Use kitchen scissors to cut away soft underside of tails. Remove meat and save the shells, arranging them in a shallow casserole dish. Chop the cooked meat on an angle into chunks. Preheat your broiler to high. Heat a medium skillet and a small saucepot over medium heat. To the small saucepot, melt 2 tablespoons butter. Add finely chopped onion and cook 3 to 5 minutes until very soft. To the skillet, add remaining 2 tablespoons butter. When the butter melts, add chopped lobster meat and saute. Add flour to sauce pot with onions and cook together another 1 to 2 minutes. Whisk in wine or sherry, then milk. Remove sauce from heat and stir in cheddar cheese and paprika or crab boil. Season sauce with salt and pepper. Pour sauce over lobster meat and stir to combine. Pour lobster into and over the shells in a casserole dish and top with Parmesan and bread crumbs. Broil on high until golden, 2 or 3 minutes. Serve each tail, spilling over with lobster bits in sauce, on a bed of mixed baby greens and parsley with wedges of lemon along side. To make this dish with jumbo shrimp, cut up peeled, deveined raw shrimp. Saute the shrimp in butter, as with cooked lobster. Cook until pink and firm and proceed with method. Place the shrimp and sauce into a small casserole, then spoon completed shrimp Thermidor over bed of greens and parsley leaves. ------------------------------------------ Smoked Trout Canapes with Creme-Fraiche and Herb Sauce for Two (appetizer) Creme Fraiche and Herb Sauce: 1/2 cup creme fraiche 1 tablespoon chopped fresh flat-leaf parsley 1 teaspoon snipped fresh dill, plus some fronds, for garnish 1 teaspoon snipped chives 1 teaspoon chopped fresh tarragon leaves 1/2 teaspoon freshly grated lemon zest 1/2 teaspoon freshly squeezed lemon juice Salt and freshly ground black pepper 4 squares mini-pumpernickel bread 4 ounces smoked trout, bones removed For the sauce: In a small bowl combine the creme fraiche, herbs, lemon zest and juice, salt, and pepper. Assemble the canapes: Dab a teaspoon or of creme fraiche sauce on 1 side of the pumpernickel slices. Place 1 or 2 large flakes or chunks of trout on each, and top with a small dollop of crème fraiche sauce. Garnish each canape with a frond of dill, and serve. -------------------------------------------- Berry-Mi-Su: Berry-Me-Up 1 package ladyfingers 1 package frozen raspberries, defrosted, 10 ounces 8 large strawberries, sliced 1/2 cup fresh blackberries, a couple of handfuls 1 cup mascarpone cheese, available in specialty cheese case of supermarket 1/3 cup heavy cream 1/2 cup confectioners' sugar Open the ladyfingers and separate them. Strain the frozen berries over a bowl, reserve juice. Combine defrosted raspberries with sliced strawberries and blackberries. Line 4 martini glasses with a single layer of ladyfingers, letting the cakes overlap a bit at the stem. Press the cakes down a bit to fit the lines of the glass. Paint the ladyfingers with raspberry juice, liberally. Beat cheese with cream and sugar on low, 2 minutes. Spoon berries, then sweetened mascarpone into glasses. Top glasses off with a cap of the ladyfingers dotted with berry juice and more mixed berries. ----------------------------------- in case you still want another side try this: Lemon Almond String Beans 2 tablespoons sliced almonds 1 pound green beans, trimmed 2 to 3 tablespoons unsalted butter, cut into small chunks 1 lemon, zest finely grated Kosher salt Freshly ground black pepper Heat a small skillet over medium-high heat. My moms friend brought us more than 10 lbs of lobster cooked and in their shell. Its just us to that would eat it, but were freezing some. Answer: Boiled Lobster INGREDIENTS: 3 gallons water 2 large onions, quartered 10 cloves garlic, peeled and cut in half 2 lemons, quartered 2 oranges, quartered 5 stalks celery, quartered 4 tablespoons black pepper 4 tablespoons seasoned salt 6 fresh jalapeno peppers 2 fresh live lobsters DIRECTIONS: Pour the water into a large pot and add the onions, garlic, lemons, oranges, celery, black pepper, seasoned salt and jalapeno peppers. Bring to a full rolling boil and boil for 20 minutes. Add the lobsters and place a lid over the pot. Boil for 15 minutes. Remove the lobsters from the pot, and place in a colander under cool running water to stop the cooking. Serve. Lobster Bisque INGREDIENTS: 1 cup chicken broth 2 medium slices onion 2 tablespoons butter 2 tablespoons all-purpose flour 2 cups milk 1/2 teaspoon salt 1 pound cooked and cubed lobster meat 1/2 teaspoon Worcestershire sauce 1 pinch ground cayenne pepper DIRECTIONS: In a small frying pan place 1/4 cup chicken stock and the onion. Cook over a low heat for 5 to 7 minutes. In a medium size pot over medium heat melt the butter. Slowly whisk in flour. Whisk until a creamy mixture is created. Gradually pour in stock, whisking constantly. Whisk in milk, salt, onion, lobster meat, Worcestershire sauce and cayenne pepper. Heat until soup is almost boiling. Do not boil the soup as the milk will curdle when boiled. Lobster Pasta INGREDIENTS: 1 large (2 pound) fresh lobster 3 tablespoons butter 1 large onion, chopped 3 cloves garlic, chopped 1 (28 ounce) can diced tomatoes 4 tablespoons olive oil 4 teaspoons salt 1 teaspoon ground black pepper 1 tablespoon ground cinnamon 1 cup heavy cream 1 (12 ounce) package dried spaghetti 1 tablespoon butter 1 clove garlic, minced 1 bunch fresh parsley, chopped DIRECTIONS: Bring a large pot of water to a boil. Add the lobster and cook for 6 to 8 minutes, until bright red. As soon as the lobster starts cooking, melt 3 tablespoons of butter in a large skillet over medium heat. Add the onion and 3 cloves of garlic. Cook and stir just to release the liquid. Do not let them brown. When the lobster comes out of the pot, place it on a cutting board and use a big knife to cut it in half lengthwise. Place the halves meaty side down into the skillet with the onion and garlic. Cook for about 3 minutes. Bring another pot of water to a boil and season with a little salt. Add the spaghetti and cook for 8 minutes, or until tender. If you want to save time and a pot, you could boil the pasta in the lobster water since it is already boiling, just add salt. Add the tomatoes to the skillet and turn the heat up to high to bring to a boil. Add the olive oil, salt, pepper and cinnamon. Cook, stirring constantly for 5 to 7 minutes. Slowly pour in the cream, stirring constantly. The sauce will become a nice pink color. (Take a sniff, mmmmmmmm.) Turn the heat down to medium-low. Keep warm, stirring occasionally until the pasta is done. Drain the spaghetti and place on a large serving plate. Stir in the remaining butter and garlic. Pour the tomato sauce over the spaghetti and arrange the two lobster halves in the center. Sprinkle all over with parsley and serve. Lobster Rolls INGREDIENTS: 1 tablespoon butter, softened 4 hot dog buns or kaiser rolls, split 4 lettuce leaves 1 1/2 pounds cooked and cubed lobster meat 2 tablespoons mayonnaise 1 teaspoon fresh lime juice 1 dash hot pepper sauce (e.g. Tabasco™) 2 green onions, chopped 1 stalk celery, finely chopped salt and pepper to taste 1 pinch dried basil, parsley or tarragon DIRECTIONS: Lightly butter the insides of the buns or rolls and line with lettuce leaves. Set aside. In a medium bowl, stir together the mayonnasie, lime juice, hot pepper sauce, salt and pepper until well blended. Mix in the green onion and celery, then lightly mix in the lobster so it just gets coated without falling apart. Stuff the lobster filling into the buns and sprinkle parsley, basil or tarragon lightly over the filling.. Lobster Lasagna INGREDIENTS: 1 (15 ounce) container ricotta cheese 2 eggs 2 cups shredded Cheddar cheese 1 cup shredded mozzarella cheese 1 cup grated Parmesan cheese 1 medium onion, minced 1 tablespoon minced garlic 2 tablespoons chopped fresh parsley 1 teaspoon freshly ground black pepper 2 (16 ounce) jars Alfredo pasta sauce 16 no-boil lasagna noodles 2 pounds cooked and cubed lobster meat 1 (10 ounce) package baby spinach leaves DIRECTIONS: Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish. In a large bowl, stir together the ricotta cheese, eggs, half of the Cheddar, half of the mozzarella cheese and half of the Parmesan cheese. Mix in the onion, garlic, parsley and pepper. Spread 1 1/2 cups of Alfredo sauce in the bottom of the prepared baking dish. Top with a layer of lasagna noodles. Arrange 1/3 of the lobster meat over the noodles, cover with 1/3 of the ricotta cheese mixture, then 1/3 of the spinach and then another layer of Alfredo sauce. Repeat this process two more times ending with sauce on top. Sprinkle the remainder of the Cheddar, mozzarella and Parmesan cheeses over the top. Give the whole pan a gentle shake to get everything settled in. Bake, covered loosely with aluminum foil, for 45 minutes in the preheated oven. Remove the foil and continue baking for an additional 10 minutes or until the top is browned. Let stand for 10 minutes before serving. Lobster Casserole INGREDIENTS: 3 tablespoons butter 1 pound lobster meat, cut into bite-sized pieces 3 tablespoons all-purpose flour 3/4 teaspoon dry mustard salt and pepper to taste 1 cup heavy cream 1/2 cup milk 3 slices bread, crust removed DIRECTIONS: Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart baking dish. Melt butter in a medium sized pot over low heat. Saute the lobster meat in butter until it starts to change color. Do not cook too long or too fast, or the lobster meat will toughen. With a slotted spoon, remove lobster meat from pan and set aside. To the remaining butter in the pot, stir in the flour, dry mustard, salt and pepper. Gradually whisk in cream and milk. Cook, stirring constantly, until thickened, about 5 minutes. Return lobster meat to the pot. Tear the bread into small pieces and stir into the mixture. Pour into prepared baking dish. Bake in preheated oven for 20 to 25 minutes or until bubbly and delicately browned. Lobster Creole INGREDIENTS: 1/4 bunch fresh parsley 1 large yellow onion, diced 1 large green bell pepper, diced 4 cloves crushed garlic 1 (14.5 ounce) can stewed tomatoes 2 tablespoons extra virgin olive oil 1 (6 ounce) can tomato paste 5 cups water red pepper sauce to taste 2/3 cup sherry 1 (4 ounce) jar pimentos, julienned 1 cup frozen petite peas 4 raw lobster tail, quartered 2/3 pound fresh shrimp, shelled and deveined without tails DIRECTIONS: Remove the stems from the parsley and discard. In a food processor combine the parsley leaves, yellow onion, green pepper, garlic and stewed tomatoes. Process just enough to chop the ingredients up. Should retain a chunky consistency In a large pot over medium/low heat, combine olive oil and parsley mixture. Cook for about 6 to 7 minutes. Stir in tomato paste until completely dissolved. Pour in 5 cups of water, red pepper sauce, sherry and red pimentos. Raise the heat to medium and simmer for about 15 minutes. Add the petit poi, lobster tails and shrimp. Simmer for 10 minutes or until shrimp are pink all the way through. Lobster Soup INGREDIENTS: 6 tablespoons margarine 6 tablespoons all-purpose flour 1 1/2 cups chicken broth 2 1/2 cups lobster meat 4 1/2 cups milk 1 1/2 onions, thinly sliced 1 pinch celery flakes 1 1/2 teaspoons chopped fresh parsley ground black pepper to taste salt to taste 3/4 cup light cream DIRECTIONS: Melt butter or margarine in a saucepan. Stir in flour, salt, pepper, and celery flakes; blend well. Very slowly mix in milk and chicken stock. Add cold lobster, onion, parsley. Cook for about 10 minutes over medium heat. Add cream to desired consistency, and reheat. Season to taste. Lobster de Jonghe INGREDIENTS: 24 ounces cooked and cubed lobster meat 1/2 cup bread crumbs 2 tablespoons thinly sliced green onion 1 tablespoon lemon juice 1/2 cup butter, melted 1/2 cup grated Parmesan cheese 1/4 cup butter, melted DIRECTIONS: Preheat oven to 350 degrees F (175 degrees C). In a small bowl, mix together bread crumbs, cheese, green onions, 1/4 cup melted margarine, and lemon juice. Set aside. Place lobster meat into 6 ramekins. Pour 1/2 cup melted butter or margarine over lobster, and top with bread crumb mixture. Bake for 25 minutes, or until topping is browned
