How do I make Corned Beef & Cabbage??
I bought the items, tell me the way to prepare and cook it... any tips would be helpful. Thank You
Answer: From scratch? Most of us don't get into the whole beef and brine stuff. Instead, we buy corned beef, cabbage, and such from the store. Throw it together and cook it until the cabbage is too soft and the beef reaches the bullet hard stage.
Canned cabbage tends to be good with brauts or hot dogs but stinks with corned beef. Corned beef and cabbage needs fresh cabbage from the produce department.
Might I suggest.... Sear the corned beef in a skillet to seal in the juices. Put it in a crock pot and cover it with naturally sweatened apple juice. Add 1/2 of the spice pack they supply with the corned beef and toss the rest. Turn it on low and let it cook for the better part of the day.
Skin and slice up some medium sweet cooking apples and put them in a sauce pan with some diced up (and rinsed) cabbage. Salt it lightly. Bring it to a boil and then cook it for 10 minutes or so. I just make sure the apples are cooked through. Pour off the water or remove it with a slotted spoon.
The corned beef will need to be removed carefully because it will be so soft that it will likely fall off of the meat forks when you try to remove it. I usually use two large slotted spoons. I put it on a cutting board and slice it into pieces an inch to an inch and a half thick.
Toss in some fresh baked sheep herder's bread and you're set. Some folks insist on adding Irish beer as a beverage. I find that overpowering for the adults and it cuts the kids out entirely. Iced tea or water works fine.

Answer: When i cook corned beef i use the one with the spices on it and i put it in a crock pot filled 1/2 way with water and the rest with apple juice then i put potatoes in. let it cook all day when your at work on Med or high temp. come home and put 1 head of cabbage in i cut mine in to 1/4 Pisces and let boil for about 1 to 1 and 1/2 hours. then slice and serve. Answer: CORNED BEEF DINNER (Slow Cooker)
4 lbs corned beef, with included seasoning packets (buy the cheapest cut, the fattier cuts have more flavor)
1 onion, quartered
2 bay leaf
2 minced garlic clove
water
2 lbs baby red potato
1 lb baby carrot
1 head cabbage
GLAZE
1cup light brown sugar
2¼ cups spicy brown mustard
To slow cooker, add brisket, seasoning packet, onion, bay leaf, garlic, and water to cover. Cover; Cook on LOW 11 hours (get up early).
Remove meat and transfer liquid to another large pot.
Spread glaze over cooked brisket and bake meat uncovered for 30 minutes at 350ºf.
To liquid, add potatoes. Cook on medium-high for 25 minutes and then add carrots, cook 10 minutes more, add cabbage (green/quartered) and cook an additional 10 minutes.
This should be done about the time the vegetables are cooked through. Serve w/ Irish Soda Bread.
(Note: An 8 lb. corned beef feeds 6 adults and 5 kids; increase potatoes to 5 lbs, carrots 2 lbs., 2 heads cabbage, and double glaze. It looks like a lot when you have it uncooked but meat shrinks about half once cooked.

INGREDIENTS:
3 pounds corned beef brisket with spice packet
10 small red potatoes
5 carrots, peeled and julienned
1 large head cabbage, cut into small wedges
--------------------------------------------------------------------------------
DIRECTIONS:
Place corned beef in large pot or Dutch oven and cover with water. Add the spice packet that came with the corned beef. Cover pot and bring to a boil, then reduce to a simmer. Simmer approximately 50 minutes per pound or until tender.
Add whole potatoes and carrots, and cook until the vegetables are almost tender. Add cabbage and cook for 15 more minutes. Remove meat and let rest 15 minutes.
Place vegetables in a bowl and cover. Add as much broth (cooking liquid reserved in the Dutch oven or large pot) as you want. Slice meat across the grain.

Answer: A beef barley soup would be a great way to reuse the broth.....I'd strain it first (if you used that seasoning packet) just to get a clearer broth to work with....Chill it overnight and the fat will congeal at the top, pick that off and proceed with your recipe, or pour it into a zip top bag and freeze till needed.....BTW, season carefully, as the braising process pulled a LOT of salt out of the corned beef during the cooking process.....Enjoy!!! Two meals out of one!!

Corned beef and cabbage From Food Network Kitchens
One 3-pound corned beef brisket (uncooked), in brine
16 cups cold water
2 bay leaves
2 teaspoons black peppercorns
4 whole allspice berries
2 whole cloves
1/2 large head green cabbage (about 2 pounds), cut into 8 thick wedges
8 small new potatoes (about 1 1/4 pounds), halved
Freshly ground black pepper
Serving suggestion: Whole-grain mustard or HORSERADISH SAUCE, recipe follows
Preheat the oven to 300 degrees F.
Place the corned beef in a colander in the sink and rinse well under cold running water.
Place the corned beef in a large Dutch oven with a tight-fitting lid; add the water, bay leaves, peppercorns, allspice, and cloves. Bring to a boil, uncovered, and skim off any scum that rises to the surface. Cover and transfer pan to the oven, and braise until very tender, about 3 hours and 45 minutes.
Transfer the corned beef to a cutting board and cover tightly with foil to keep warm. Add the cabbage and potatoes to the cooking liquid and bring to a boil. Lower the heat and simmer until the vegetables are tender, about 20 minutes.
Using a slotted spoon, transfer the cabbage to a large platter. Slice the corned beef across the grain of the meat into thin slices. Lay the slices over the cabbage and surround it with the potatoes. Ladle some of the hot cooking liquid over the corned beef and season with pepper. Serve immediately with the mustard or horseradish sauce.

I have just recently moved to the metroplex (Plano) and as such, dont seemingly find the best diners or small resturants that arent just a part of a chain, but it is St Patricks Day and Im looking for a decent place that would have Corned beef and cabbage.
I know Humperdinks has some irish themed things on their menu, but I guess I am looking for more then that.

Answer: I don't know about Plano, but in Frisco, there are two locally-owned Irish places that will have it today. One is behind Stonebriar mall in the same shopping center with Target, it is called the Irish Rover. Link: http://www.irishroverpub.com/
The other one is Lochrann's and is up the tollway...you take the Main Street exit and turn right on Main (by Pizza Hut Park), it will be on your right just across from the stadium. Corned beef and cabbage
Ingredients
1 large corned beef brisket
2 or 3 cans of cheap beer, e.g. MGD
a couple of dried chiles, perhaps serranos
1 or 2 teaspoons coriander seeds
1 or 2 teaspoons mustard seeds
a few dashes cinnamon
a few dashes of allspice
3 or 4 large potatoes, scrubbed and chopped in quarters
5 or 6 carrots, coarsely sliced
3 or 4 turnips, scrubbed and sliced
1 large cabbage, coarsely chopped
1 lb mixed beans
Directions:
Buy a corned beef brisket at your local supermarket. In a pot, pour 12 ounces of beer. Add a bay leaf or two, a dried red chile or two, a teaspoon or two of coriander seeds, a teaspoon or two of mustard seeds, a few dashes of cinnamon, a few dashes of allspice, and all the juice from the corned beef pack. Put the corned beef on a steamer rack in the pot and add water to bring the liquid level up to the bottom of the rack.
Cover the pot and put it on some heat and bring the liquid to a boil. Steam for several hours (it took me five hours for a 4 lb brisket) until the meat doesn't feel rubbery when you stick a fork in it. Add water or beer or both as needed to keep some liquid in the pot. [I usually steam the corned beef over night.]
Remove the meat and slice. Remove the steamer rack. [I just leave the meat in at this point. It's in no condition to slice.] Leave all the other stuff in the pot and put in some potatoes and carrots and turnips or whatever. Add water [or MGD!] to cover and boil until the stuff is cooked. Remove all the vegatables and potatoes. [I leave the potatoes, carrots and turnips in.] Put the steamer rack back in and put in some cabbage wedges. Steam them for about five to ten minutes, depending on how crisp or soggy you like cabbage. [I use 15 minutes.] Serve.
Get out some beans which you have thoughtfully left soaking overnight in water (I used white beans, red beans and black beans all mixed up). Drain them and put them in a pot. Cover them with the liquid that you have been using to cook the Corned beef and cabbage and potatoes and vegatables. The liquid should be about an inch higher than the beans. Simmer for three or four hours or until the beans are as firm or as mushy as you like them. The beans will not be ready with the rest of the meal but, as the original poster noted, you can eat them reheated the next day when the flavors have had a chance to "marry".
And dont forget the Soda Bread to sop up the juices
Irish Soda Bread
To make one 8-inch round loaf, you will need:
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 to 1 1/2 cups buttermilk
Preheat the oven to 425 degrees Fahrenheit. Sift the flour, soda and salt together into a deep mixing bowl. Gradually add 1 cup of buttermilk, mixing with a large spoon until the dough is firm enough to be gathered into a large ball. If the dough crumbles, add some more of the buttermilk, a tablespoon at a time, until the particles adhere.
Place the dough on a lightly floured board, and pat and shape it into a flat circular loaf about 8 inches in diameter and 1 1/2 inches thick. Set the loaf on a floured baking sheet. With the tip of a small knife, cut a 1/2 inch deep cross into the dough, dividing the top of the loaf into quarters.
Bake the bread in the middle of the oven for about 45 minutes, or until the top is golden brown. Remove from the oven and wrap in a clean cloth and let cool on a wire rack for about 20 minutes.

Can I make the meat the night before, refridgerate the meat & broth then heat them back up the day of and do the veggies as it warms back up?
Answer: Certainly. That should work very well. Refrigerate the meat covered with he brothto keep it nice and juicy.
